Use Your Leftover Ham and Rice to Make Mini Casseroles in Your Air Fryer

These mini-casseroles are simple to make and easy to eat. They are filled with savory ham and vegetables and sweet apples. With rice added in, you have a one-dish meal. Using the air fryer to cook the ham casseroles means you can have dinner quickly and without heating up your main oven. I make my casseroles in small, non-stick pie dishes and, after cooling them slightly, remove the casseroles to serve them. You can serve them right in the dish, if you prefer. Ramekins also work well to make the casseroles. These little casseroles really are quite tasty, and they are a great way to use up leftover ham and rice in a different way. Enjoy!

Use Your Leftover Ham and Rice to Make Mini Casseroles in Your Air Fryer

Air Fryer Ham and Rice Casseroles -- Makes 4


1 small onion, chopped

1-2 ribs of celery, chopped

1 medium apple, cored and chopped

1 1/2 - 2 cups of chopped ham

1/2 teaspoon of cinnamon

1/4 teaspoon of garlic powder

1/4 teaspoon of pepper

1/2 teaspoon of dried parsley

1 1/2 - 2 cups of cooked rice

1/2 cup of milk

1/2 cup of light sour cream

2-3 tablespoons of raisins

1/2 cup of Italian-style shredded cheese (cheddar also works well)


In a large bowl combine the onion, celery, and apple with a tablespoon of water. Microwave the mixture for 2-3 minutes until the vegetables soften a little. Stir in the remaining ingredients, mixing everything well. Spritz four five-inch non-stick pie tins with non-stick cooking spray (or use large ramekins) and divide the mixture between the four tins. You'll need to mound the mixture in each tin. Spritz the tops of the mounds with non-stick cooking spray. Place the tins (however many will fit at one time--in my case it's two) in your air fryer basket, put the basket in the air fryer, and air fry the casseroles at 320 degrees for about 20 minutes or until cooked through and very brown on top. Remove the casseroles from the air fryer basket and repeat the cooking process with the remaining uncooked mixture. Let the casseroles cool in their pans for five or 10 minutes before removing them (loosen the edges with a plastic knife, then slide the knife under the underside of the casserole to lift it out) to serve. Alternatively, serve the casseroles in the pie tins/ramekins.
