How to Make Quick and Easy Sourdough Sesame Cheese Buns (Diabetic Friendly)

These simple-to-make cheese buns are a great way to use up your starter/discard and can be baked or air fried immediately--no rising time needed. The buns come out soft, cheesy, and with a nice crunch from toasted sesame seeds. With whole-grain white whole-wheat flour and the protein-rich cheese, the buns are acceptable if you're on a diabetic diet or want to "eat healthy" (in moderation, as always). We like the buns alongside dinner or with soup and/or a salad. The buns also make a nice accompaniment to a breakfast omelet. Enjoy!

Sourdough Sesame Cheese Buns (Diabetic Friendly) -- Makes 12
1 cup of starter/discard
1 cup of white whole-wheat flour
1 1/2 teaspoons of baking powder
1/2 teaspoon of salt
1/4 teaspoon of baking soda
3/4 cup of shredded cheddar cheese
1/4 cup of butter, melted
1/2 cup of milk
2 teaspoons of lemon juice
2-3 tablespoons of sesame seeds
In a large bowl mix together well the starter/discard, white whole-wheat flour, baking powder, salt, and baking soda. Stir in the shredded cheese until well distributed. Combine the melted butter, milk, and lemon juice in a cup and add the milk mixture to the starter mixture, stirring to combine everything thoroughly. Drop 12 even portions (3-4 tablespoons each) onto baking parchment, leaving a couple of inches of space between the dough mounds. With damp hands, shape the dough mounds into rounds about an inch thick. Sprinkle the sesame seeds evenly over the tops of the dough rounds.
Air Fryer: Air fry the buns at 320 degrees for 10-15 minutes or until golden brown.
Oven: Preheat the oven to 350 degrees. Bake the buns for about 15 minutes or until golden brown.
Let the bus cool on their parchment for a few minutes before removing them to eat or cool completely.
