These little treats take minutes to make and minutes to bake in your air fryer. You'll need three basic ingredients: an unbaked pie crust, a box of strawberry jello, and an egg white. The crunch rollups are just that: crunchy little rolls of pie crust that are sweetened and flavored with strawberry jello. They are surprisingly good for something so simple, and, not surprisingly, they're addictive. For that "addictive" reason, it's a good thing that the recipe makes only a small batch (of course if you have two piecrusts...). The little rollups look nice on a tray of Christmas cookies or alongside a plate of fresh fruit. The treats are especially good with a cup of hot tea, coffee, or cider. And, yes, you can use other flavors of jello--lime, for example, for green rollups. Enjoy!
Air Fryer Strawberry Crunch Rollups -- Makes about 12
1 unbaked flat pie crust (like Pillsbury, or I use half a package from Lidl)
1 small box of strawberry jello (the kind with sugar)*
1 egg white from a large egg
Cut pieces of baking parchment to fit your air fryer basket. Remove the pie crust from the refrigerator and let it sit on a piece of baking parchment for at least 10 minutes to soften. In a medium bowl whisk or beat the egg white until it's foamy and gradually add two tablespoons of the strawberry jello. Keep whisking (or beating) until the egg white mixture forms soft peaks. Cut the pie crust into 12 (or so) wedges. Spoon about a teaspoon of the jello mixture on the wide side of each wedge. You can spread the mixture out a bit with the back of a spoon if you'd like. Roll up the piecrust wedge from the wide end, forming a rough crescent (they'll be small). Some of the filling will ooze out. That's messy but okay. With your fingers, just rub the filling that oozes out on top of the rollups (it will help hold the jello you'll sprinkle on in place). Place a piece of baking parchment in your air fryer basket and place 4-6 of the rollups on the sheet, spacing the rollups about half an inch apart. Sprinkle the tops of the rollups with 1/2 tablespoon of jello. Put the air fryer basket in the air fryer, set the temperature to 360 degrees, and air fry the rollups for about 10 minutes or until set and very lightly browned. Remove the rollups from the air fryer and repeat the cooking process with the remaining unbaked rollups. The rollups are best served warm but are good at room temperature, too. If you want to reheat the rollups, just give them a couple of minutes in the air fryer at 320 degrees.
*Note: You won't use the whole box of jello. Just save the remainder for another batch of rollups or use it to make half of the recipe for jello (1/2 cup of hot water, the remainder of the box of jello, and 1/2 cup of cold water).
