Need Cookies? Make Air Fryer Chocolate Brownie Chews

Ooh! These cookies are one of my favorite air fryer cookies. They are deep, dark, chocolately, crispy on the edges, and chewy in the centers. The cookies are loaded with chocolate bits that are bliss to bite into as you munch away. You can use whatever chocolate you like and have on hand--dark, milk, semi-sweet, etc.. I've successfully used pieces of broken Christmas chocolates (i.e., chocolate Santas). I use nuts in the cookies--usually pecans, or sometimes walnuts or hazelnuts--but the nuts are optional. I like to add the nuts because they add extra flavor and crunch, but, if you leave them out, that's fine. The cookies take minutes to mix up, require ingredients that are easy to find and/or that you're likely to have on hand, and air fry in about 10 minutes. Feel free to make a few cookies and stash the remainder of the dough, well wrapped in plastic, in the refrigerator to bake another day. I usually make only three or four cookies at a time to limit my temptation! The cookies are fantastic warm from the air fryer with a cup of tea or coffee or even a glass of milk. The cookies also make great accompaniments to fruit or ice cream. Enjoy!

Air Fryer Chocolate Brownie Chews -- Makes 10+

1/2 cup of sugar

1 large egg

1/2 teaspoon of vanilla

1/3 cup of canola oil

3 tablespoons of baking cocoa

1/2 cup of flour

1/8 teaspoon of salt

1/4 teaspoon of baking soda

3/4 cup of broken chocolate pieces or chocolate chips

1/4 cup of chopped nuts

In a medium bowl mix together well the sugar, egg, vanilla, and oil. Mix in the baking cocoa until well combined with the wet ingredients. Stir in the flour, salt, and baking soda until just combined. Fold in the chocolate pieces and then the nuts. Cut small pieces of baking parchment to fit your air fryer basket. Drop 1 1/2 tablespoon scoops of dough onto the parchment sheets, two dough mounds to a sheet, and spacing the mounds as far apart as possible. Slightly flatten the dough with damp fingers (so the dough balls don't roll). Put one dough-topped piece of parchment in your air fryer basket, put the basket in the air fryer, and air fry the cookies at 320 degrees for 8-10 minutes. The cookies will look quite moist when you remove them from the air fryer but will firm up as they sit. Repeat the cooking process with the remainder of the dough or stash some of the dough in the refrigeration (well wrapped in plastic) to bake later.
