It's amazing how good these baked bananas are given how simple they are to make. And cheap. You need very little time to put the recipe together, and the bananas can cook in the air fryer while you eat dinner. The baked bananas are great "as is," warm from the air fryer. They're even better when served with a big scoop of ice cream. Try the baked bananas with vanilla or butter pecan ice cream. If you want something more sophisticated, serve the baked bananas in a glass dish topped with coffee or rum raisin ice cream and drizzled with a little rum. The warm bananas will melt the ice cream a little and you'll have very happy taste buds and tummies at your table. Enjoy!
Air Fryer Baked Bananas -- Serves 4
1/4 cup of dark brown sugar
3 tablespoons of butter
2 tablespoons of orange juice
1/4 teaspoon of cinnamon
3 very ripe bananas (medium-large)
Ice cream (optional but highly recommended)
Spritz two 5-inch square or round baking dishes with cooking spray. Add the brown sugar, butter, orange juice, and cinnamon to one dish and microwave the mixture for about 30 seconds (until the butter melts into the brown sugar), and then stir the mixture. Pour half of the butter/sugar mixture into the other dish. Slice the bananas, and divide them (1 1/2 bananas per dish) between the dishes. Mix the banana slices into the butter/sugar mixture until coated. Put one dish into your air fryer basket, put the basket into the air fryer, and air fry the bananas at 360 degrees for about 20 minutes or until deep golden brown. Remove the bananas to cool and repeat the cooking process with the remaining dish of bananas. Serve the bananas and the sauce plain or with ice cream.
