These muffins are easy to make and come out of the oven or air fryer moist and delicious. The muffins are sweetened primarily with dates and pears, not refined sugar or artificial sweeteners. Walnuts add crunch and extra flavor and protein to the muffins. With plenty of whole-grain fiber, protein, and "healthy fats," the muffins are great (in moderation, as always!) if you're on a diabetic diet or want to "eat healthy." We like the muffins for breakfast and alongside dinner, and they also make nutritious snacks with a cup of coffee or tea or a glass of milk. Enjoy!

Delicious, Easy to Make, Diabetic-Friendly Barley Muffins with Pears and Dates

Barley, Pear, and Date Muffins (Diabetic Friendly) -- Makes 10


1/3 cup of canola oil

1 large egg

1/3 cup of plain Greek yogurt

1/2 cup of milk

1 cup of pears, peeled and chopped

1/2 cup of pitted dates, chopped

1 1/4 cup of barley flour

1 1/4 teaspoon of baking powder

1/4 teaspoon of salt

1 teaspoon of cinnamon

1 teaspoon of ground ginger

1/4 teaspoon of allspice

1 cup of chopped walnuts, divided


Spritz 10 baking cups with non-stick cooking spray and set them aside. In a large bowl whisk together the oil, egg, yogurt, and milk. Stir in the dates and pears. Add to the bowl the barley flour, baking powder, salt, and spices and stir them into the wet mixture until combined. Stir in half the walnuts. Divide the batter evenly among the prepared muffin cups and sprinkle the remaining walnuts evenly on top of the batter.

Air Fryer: Air fry the muffins on the "bake" setting at 350 degrees for 15-20 minutes or until golden and a pick inserted in a muffin comes out with no wet batter attached. If you don't have a bake setting on your air fryer, air fry the muffins at 320 degrees for 15-20 minutes. Let the muffins cool a little before removing them from their cups to cool completely.

Oven: Preheat the oven to 400 degrees. Bake the muffins for about 20 minutes or until golden and a pick inserted in a muffin comes out with no wet batter attached. Let the muffins cool a litte before removing them from their cups to cool completely.
