How to Make Easy, Affordable Lemon-Herb Pork Tenderloin in Your Air Fryer (Diabetic Friendly)

This simple pork tenderloin is loaded with flavor and cooks in about half an hour in your air fryer. The pork comes out tender and juicy and makes a special meal, whether for a weeknight--it's that easy!--or the weekend. In addition to the bright lemon flavor and garlic, the pork gets its flavor from herbes de Provence, which is a mixture of dried herbs typically found in southeastern France. Commercial herb mixtures, particularly those found in the United States, vary, but usually include savory, rosemary, thyme, oregano, marjoram, and sometimes lavender. You can make your own blend by including a little of each, but most major supermarkets sell herbes de Provence, as does Amazon. Low in carbohydrates and high in protein, the pork is great if you're on a diabetic diet or want to "eat healthy." We like the pork with baby potatoes or sweet potatoes, a green vegetable, and a simple salad alongside. Enjoy!

Air Fryer Lemon-Herb Pork Tenderloin (Diabetic Friendly) -- Serves 4
16 ounce pork tenderloin, trimmed of silver skin and cut in half, crosswise
1/2 teaspoon of salt
1/4 teaspoon of pepper
1 tablespoon of chopped garlic
1 teaspoon of herbes de Provence
Juice of a medium lemon (3-4 tablespoons)
2 tablespoons of olive oil
1/2 teaspoon of onion powder
Spritz a baking dish large enough to accommodate your tenderloin with non-stick cooking spray. In a cup or small bowl mix together the salt, pepper, garlic, herbes de Provence, lemon juice, olive oil, and onion powder and pour them over the pork. Turn the pork. Air fry the pork at 320 degrees for 20 minutes, turning the pork over mid-way through (after 10 minutes), and spooning some of the juices over the pork when you turn it. Increase the temperature of the air fryer to 400 degrees and cook the pork another 3-5 minutes to brown it and until it reaches an internal temperature of 145 degrees. Let the pork stand 5-10 minutes before slicing it, crosswise, into rounds.
