How to Make Easy, Fruit-Sweetened Ultra Almond Cookies (Diabetic Friendly, No Artificial Sweeteners, No Butter)

These simple cookies mix up in minutes and are full of almond flavor. The cookies are lightly sweetened with date puree, rather than refined sugar or artificial sweeteners. Almond flour, chopped almonds, and a bit of almond extract give the cookies extra almond flavor. I like to make the cookies in the air fryer, but you can also bake them in a regular oven. The cookies are great if you're on a diabetic diet or want to "eat healthy," as they have a nice balance of fiber, protein, and "healthy" fats. We like the cookies for a simple dessert or a snack alongside tea or coffee. Enjoy!

Fruit-Sweetened Ultra Almond Cookies (Diabetic Friendly) -- Makes 12 +
1/4 cup of canola oil
1 large egg
1/2 teaspoon of vanilla
1/2 teaspoon of almond extract
1/2 cup of date puree (pour just enough boiling water over chopped dates to cover
them, let the mixture cool, and mash it well with a fork or use a food processor to
puree it)
1/2 cup of almond flour
1/2 cup of white whole-wheat flour
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of cinnamon
1/4 teaspoon of salt
1/2 cup of chopped almonds
Whole almonds for decoration (optional)
In a large bowl combine the canola oil, egg, extracts, and date puree until blended. Add to the bowl the flours, baking powder, baking soda, cinnamon and salt and stir them in until combined. Stir in the chopped almonds.
Air Fryer: Cut small pieces of baking parchment to fit your air fryer basket. Drop 1 1/2-2 tablespoon scoops of dough onto the baking parchment, leaving a couple of inches between the dough mounds. With damp fingers, flatten out the dough mounds until they are about 1/2-inch thick. Place a whole almond in the center of each dough mound, if you'd like. Air fry the cookies at 300 degrees for about 8 minutes or until a light golden brown and mostly set. Let the cookies cool on their parchment for a few minutes before removing them to cool completely.
Oven: Preheat the oven to 325 degrees. Line baking sheets with baking parchment. Drop 1 1/2-2 tablespoon scoops of dough onto the baking parchment, leaving at least a couple of inches between the dough mounds. With damp fingers, flatten out the dough mounds until they are about 1/2-inch thick. Place a whole almond in the center of each dough mound, if you'd like. Bake the cookies for about 10 minutes or until a light golden brown and mostly set. Let the cookies cool on their parchment for a few minutes before removing them to cool completely.
