These are really, really good pork chops--moist, tender, and full of flavor. The chops also are easy to make and cook in about 20 minutes. Potatoes accompany the chops, meaning you'll have an easy cleanup menu. The chops get a coating that includes a little Greek yogurt and Dijon mustard, along with some herbs and an unusual ingredient for a topping, unsweetened applesauce. The applesauce provides a bit of sweetness that offsets the Dijon and really complements the pork. A light crumb topping provides a bit of crunch to the chops. The potatoes are sliced thin, mixed with a bit of olive oil, parsley, and paprika, and cook underneath the chops. The chops make a special yet economical meal and are great for a weeknight or weekend dinner. Enjoy!
Air Fryer Mustard and Herb Pork Chops -- Serves 2+
2 big pork chops, about an inch and a half thick
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon of plain Greek yogurt (fat free is fine)
1 tablespoon of Dijon mustard
2 tablespoons of unsweetened applesauce
1 tablespoon of chopped fresh thyme or 1/2 teaspoon of dried thyme
1 tablespoon of chopped fresh chives (or use green onion tops)
1 tablespoon of fresh whole-wheat bread crumbs (about 1/4 of an English muffin)
Extra parsley to sprinkle on the pork chops after cooking (optional)
Potatoes
2 medium/small potatoes, peeled and sliced/chopped in 1/4-inch thick pieces
2-3 teaspoons of olive oil
1/8 teaspoon of salt
1/8 teaspoon of pepper
1 tablespoon of fresh chopped parsley (or use a teaspoon of dried parsley)
1/4 teaspoon of paprika (sweet or smoked)
Spritz a piece of aluminum foil that will fit in your air fryer basket and an inch or two up the sides of the basket. Put the foil in the basket. Mix the potatoes with the oil, salt, pepper, parsley, and paprika and spread the mixture on the foil. Air fry the potatoes at 360 degrees for 5-6 minutes while you prepare the pork chops. Pat the pork chops dry with a paper towel and season them with the salt and pepper. Mix together in a cup the yogurt, Dijon mustard, applesauce, thyme and chives. Place the chops on top of the partially cooked potatoes (not touching, if possible) and then divide the yogurt-Dijon mustard mixture between the chops. Spread the yogurt mixture over the entire top surface of the chops. Sprinkle the bread crumbs evenly on top of the yogurt mixture on each of the chops. Spritz the tops of the chops with a little olive oil (it will help keep the breadcrumbs in place and from burning). Air fry the chops and potatoes at 360 degrees for about 20 minutes or until the chops reach an internal temperature of 145 degrees (if your chops are thinner than an inch and a half, you'll probably need a little less time). Sprinkle the chops with a little parsley, if you'd like, before serving them.
