How to Make Gingerbread Biscotti in Your Air Fryer

These are simple to mix up cookies, require ingredients you probably have on hand, and are relatively inexpensive to make. The biscotti cook in the air fryer in minutes. You can make a batch for dinner or a special treat and stash the rest of the dough in the refrigerator to make another day. I like the cookies because they have a nice crunch that's not tooth shattering and for their subtle molasses-spice flavor. If you'd like, you can dress up the biscotti with a drizzle of white (or dark) chocolate, but I usually just eat them plain. The biscotti are perfect with a cup of tea or for dunking into a cup of coffee. They also are nice alongside fruit or ice cream. Enjoy!

Air Fryer Gingerbread Biscotti -- Makes 12+


1 large egg

1/3 cup of sugar

1/4 cup of canola oil

1/2 teaspoon of vanilla

1 tablespoon of molasses

2 tablespoons of dark brown sugar

3/4 teaspoon of baking powder

1/4 teaspoon of salt

1 1/4 cups of flour

1/4 teaspoon of pumpkin pie spice

3/4 teaspoon of ground ginger

Turbinado or raw sugar to sprinkle or just use plain white sugar, optional

Melted white or dark chocolate to drizzle, optional


In a medium or large bowl mix together well the egg, sugar, oil, vanilla, molasses, and brown sugar. Add the baking powder, salt, flour, and spices and mix them in until they are combined. Cut small pieces of baking parchment to fit into the bottom of your air fryer basket. Form two six-inch long (approximately) logs of dough, placing only one log on a sheet of parchment (diagonally works best for me). Moisten the tops of the logs with wet hands and sprinkle on some sugar. Air fry one log at a time at 320 degrees for 15-18 minutes. The log should be puffed and just a little firm to the touch. Remove the log to cool, put the second log into the air fryer, and repeat the cooking process (unless you want to cook it another day, in which case, refrigerate log number two). Let the first log cool for about five minutes. Take a very sharp knife--I use a ceramic chef's knife--and make firm, downward cuts to cut the log, crosswise, into slices about an inch thick. Turn the slices down so the flat sides are resting on the parchment. Air fry the cut slices at 320 degrees for 4-5 minutes. The slices will crisp up more once you remove them from the air fryer to cool. You can serve the biscotti "as is" or drizzle them with chocolate.
