How to Make Easy, No Sugar Added Peanut Butter and Banana Cookies With Chickpea Flour (Diabetic Friendly, No Artificial Sweeteners, No Eggs)

These cookies are different and quite good! The cookies are a great way to use up a few mushy bananas, and they also are a nice, no-sugar-added treat. The cookies get their sweetness primarily from fruit, not refined sugar or artificial or heavily processed "natural sweeteners." Besan, or chickpea flour, provides a substantial amount of protein, fiber, and vitamins, well as being low on the glycemic index--so it's great if you're diabetic. Rather than eggs, which are outrageously expensive right now, the cookies include a bit of milled flax seed for a binder. Peanut butter and chopped, dry-roasted peanuts provide loads of flavor as well as extra protein. You can include some dark chocolate chips on top of the cookies, if you like (I do!). Or leave the cookies plain (as my husband prefers). Either way, the cookies are good, especially with a cup of tea or coffee. The cookies also make a great, nutritious after-school treat for kids, especially with a big glass of milk. Enjoy!

No Sugar Added Peanut Butter and Banana Cookies With Chickpea (Besan) Flour (Diabetic Friendly) -- Makes 16+


3 very, very ripe bananas, mashed

1/3 cup of canola oil

1/3 cup of no sugar added peanut butter

1 teaspoon of vanilla

1/3 cup of date puree (barely cover pitted dates with boiling/very hot water, let them

stand until cool, and mash/process them with any remaining water)

1 tablespoon of milled flax seeds

1/2 cup of milk

2 cups of besan (chickpea) flour

1/2 teaspoon of baking soda

1/2 teaspoon of baking powder

1/2 teaspoon of salt

1/3 cup of chopped, unsalted, dry-roasted peanuts

1/4 cup or so of dark chocolate chips (optional)


In a large bowl combine the bananas, canola oil, peanut butter, vanilla, date puree, milled flax seeds, and milk and mix them together well. Add the besan flour, baking soda, baking powder, and salt and mix them in until combined. Stir in the chopped peanuts.

Air Fryer: Cut pieces of baking parchment to fit your air fryer basket. Drop 1 1/2 tablespoon scoops of the batter onto each piece of parchment, leaving a couple of inches of space between the batter rounds. Leave the batter plain or sprinkle some chocolate chips over it. Air fry the cookies at 300 degrees for about 10 minutes or until set and golden. Let the cookies cool on their parchment for a few minutes before trying to remove them.

Oven: Line baking sheets with baking parchment. Drop 1 1/2 tablespoon scoops of the batter onto the parchment, leaving a few inches of space between the batter rounds. Leave the batter plain or sprinkle some chocolate chips over it. Preheat the oven to 325 degrees and bake the cookies for 10-15 minutes or until set and golden. Let the cookies cool on their parchment for a few minutes before trying to remove them.
