How to Make Easy, Fruit-Sweetened Carrot Cake Cookies That a Diabetic--and Others--Can Eat (No Artificial Sweeteners)

These simple-to-make cookies are good and good for you! They are sweetened primarily with date puree (see https://www.thenfeedthem.com/post/how-to-make-date-puree-and-why-you-should-especially-if-you-re-diabetic-or-cutting-back-on-sugar ) and crushed pineapple. Shredded carrots add a bit of extra sweetness as do a small amount of raisins and sweet spices. The cookies are loaded with whole grains and fiber. If you're on a diabetic diet or want to "eat healthy," the cookies are great (in moderation, as always). How do they taste? They taste of carrot cake and are similar in texture to an oatmeal cookie. The cookies are sweet but not cloyingly so. They make a nice snack with a cup of coffee or tea, and they are great as an after-school treat with a glass of milk. Enjoy!

Carrot Cake Cookies (Diabetic Friendly) -- Makes 16
1/2 cup of date puree
1 large egg
1/2 cup of canola oil
1/2 cup of crushed pineapple
1 cup of shredded carrot
1 tablespoon of ground or milled flax seeds
1 teaspoon of vanilla
2 tablespoons of milk
1/2 cup of quick oats
1/2 cup of oat flour (grind oats in a food processor or blender)
1/2 cup of white whole-wheat flour
1/2 teaspoon of salt
1/2 teaspoon of baking soda
1/2 teaspoon of baking powder
1 teaspoon of cinnamon
1/2 teaspoon of allspice
1/2 teaspoon of ground ginger
1/4 teaspoon of nutmeg
1/3 cup of raisins
3/4 cup of chopped walnuts or pecans (preferably toasted)
In a large bowl combine the date puree, egg, oil, crushed pineapple, shredded carrot, ground flax seeds, vanilla, and milk. Add to the bowl the oats, oat flour, white whole-wheat flour, salt, baking soda, baking powder, and spices and stir everything together until all the ingredients are fully incorporated. Stir in the raisins and walnuts.
Air Fryer: Cut small pieces of baking parchment to fit your air fryer basket. Drop 2 tablespoon scoops of dough onto the parchment, leaving an inch or two of space between the dough mounds. With damp fingers flatten out the dough to about 1/2-inch thick. Air fry the dough at 320 degrees for 10-12 minutes or until the cookies are set and light brown in color. Let the cookies cool on their parchment a few minutes before removing them.
Oven: Preheat the oven to 350 degrees. Drop 2 tablespoon scoops of dough onto a baking sheet lined with baking parchment. Leave a couple of inches between the dough mounds. With damp fingers flatten out the dough to about 1/2-inch thick. Bake the cookies for about 15 minutes or until set and light brown in color. Let the cookies cool on their parchment for a few minutes before removing them.
