How to Make Banana-Oat Butterscotch Breads in Your Air Fryer

This is an easy and quick recipe to use when you have several mushy bananas on hand. You can mix the breads up with basic kitchen equipment--no mixer needed! The breads come out of the air fryer in minutes and are moist and full of sweet banana flavor. The small amount of oats in the batter provide a bit of texture to the breads as well as increasing beneficial fiber. A handful of butterscotch chips give the breads nice caramel flavor and additional sweetness. The breads are great for a breakfast treat and make a nice snack with your coffee or tea. Warm from the air fryer, the breads also make a tasty dessert with a scoop of ice cream and perhaps a drizzle of caramel sauce. Enjoy!

How to Make Banana-Oat Butterscotch Breads in Your Air Fryer

Air Fryer Banana-Oat Butterscotch Breads -- Makes 3 Mini Loaves


1/2 cup of canola oil

1/3 cup of sugar

1 large egg

3 very ripe (i.e., mushy is fine) bananas, mashed

1 cup of flour

1 1/2 teaspoons of baking powder

1/4 teaspoon of salt

1/2 cup of quick oats

1/2 cup of butterscotch chips

1/2 cup of broken or chopped pecans or walnuts


Spritz three mini-loaf pans with non-stick cooking spray. In a medium bowl whisk together well the oil, sugar, egg, and bananas. Stir in the flour, baking powder, salt, and oats until combined. Fold in the butterscotch chips. Divide the batter among the loaf pans. Sprinkle the top of the batter with the chopped nuts. Put 2-3 filled pans in your air fryer basket (depending on the size of the basket), put the basket in the air fryer, and air fry the breads at 320 degrees for about 20 minutes or until a pick inserted in the center of a loaf comes out with no wet batter attached. Remove the breads to cool and repeat the cooking process with the remaining batter (if necessary). Let the breads cool in their pans for about 10 minute before removing them to cool completely.
