Air Fryer Banana Raisin Bran Breakfast Bakes -- Makes 4
2 bananas (medium-large)
1/2 cup of cottage cheese
2 large eggs
3/4 teaspoon of cinnamon, divided
1 tablespoon of maple syrup
1 cup of raisin bran
1-2 tablespoons of brown sugar
Vanilla yogurt, optional but good
Spritz 4 small ramekins with non-stick cooking spray. In a medium bowl or measure mash the bananas well. Add the cottage cheese, eggs, 1/2 teaspoon of cinnamon, maple syrup, and raisin bran and beat everything well. Divide the mixture evenly among the ramekins. Sprinkle the top of the batter in each ramekin with the brown sugar and the remaining cinnamon. Spritz the top of batter/sugar/cinnamon with a little cooking spray (it keeps the sugar in place during the air frying). Put 2-4 of the ramekins in your air fryer basket (depending on the size of your air fryer), put the basket in the air fryer, and air fry the bakes at 320 degrees for about 20 minutes or until the bakes are a deep golden brown and set. Let the bakes cool in their ramekins for about 5 minutes before turning them out to serve them, with or without a dollop of vanilla yogurt. Or just serve the bakes in their ramekins, if you'd prefer. Repeat the cooking process with the remaining ramekins if necessary.
