If you need to feed your starter but don't the time (or inclination) to let the bread rise, opt for this easy alternative. The bread is leavened with baking powder, yet it still has a nice sourdough tang that complements the garlic, Parmesan cheese, and, and onion flavors in the dough. You can cook the bread in your air fryer in a little more than half an hour, or, if you prefer, you can bake the bread in a regular oven. Just preheat the oven to 350 degrees and bake the bread for 50-60 minutes. The bread is quite moist inside and has a nice, crunchy exterior. White whole-wheat flour gives the bread beneficial fiber and extra nutrition. The bread is great as an alternative to regular garlic bread and is especially good slathered with butter! That said, I usually eat the bread plain, and it's quite tasty "as is." We also enjoy the bread for "open face" sandwiches. Enjoy!
Quick Sourdough Garlic-Parmesan Bread -- Makes 1 Loaf
1 cup of sourdough starter/discard
1/4 cup of canola oil
1/2 cup of milk
1/4 cup of grated Parmesan cheese
1 1/2 cups of white whole-wheat flour
1/2 teaspoon of garlic powder
2 teaspoons of baking powder
1/4 teaspoon of salt
1/4 cup of chopped green onion (or use chives, if you have them)
1 teaspoon of cornmeal
Spritz a loaf pan or oval casserole dish with non-stick cooking spray and set it aside. In the photos you see with the post, the bread is oval-shaped because I used a recycled aluminum foil pan from a take-out burrito. The pan just fits in my air fryer and is great for bread baking! It also was free, if you don't count the cost of the burrito. To a large bowl add the starter/discard, oil, and milk and mix them together well. Add the Parmesan cheese and mix it into the wet ingredients. Add the flour, garlic powder, baking powder, and salt to the bowl and mix them in until completely combined with the wet ingredients. Fold in the green onions. Spread the the dough in the prepared pan and sprinkle the top of the dough evenly with the cornmeal. Spritz the top of the dough well with non-stick cooking spray or olive or canola oil. Air fry the bread at 350 degrees for 20 minutes, then turn down the temperature to 320 degrees and air fry the bread for another 10-15 minutes or until quite brown and a pick inserted in the center of the bread comes out with no wet batter attached. Let the bread cool in its pan for 5-10 minutes before turning it out to cool completely.
