Have Leftover Puff Pastry? Make Air Fryer Grape Tarts

Grape tarts may sound weird, but they are actually really, really good! They also are great to make when those grapes that have been sitting on your counter or in your refrigerator drawer have been sitting a bit too long. I decided to make the tarts when I discovered some grapes in the frig that were way past their prime. A quick stint in the microwave with some sugar and a few other ingredients produced the filling for tarts. I had a little puff pastry left from another project--just enough for four tarts. Because it was too hot to turn on the regular oven, I opted to use the air fryer. In about 15 minutes, I had warm, crispy grape tarts! The filling is a little sweet, a little tart, and includes a dash of cinnamon for extra flavor. You can leave the tops of the tarts plain or decorate them with a bit of puff pastry, if you'd like. The tarts are great "as is," dolloped with whipped cream, or served with vanilla ice cream. Enjoy!

Air Fryer Grape Tarts -- Makes 4


2 cups of grapes (I use red)

1/4 cup of lemon juice

1/2 cup of sugar

1/8 teaspoon of cinnamon

2 tablespoons of water mixed with 2 tablespoons of cornstarch

4 4-inch square (approximately) pieces of puff pastry, thawed


Put the grapes, lemon juice, sugar, and cinnamon in a microwavable bowl or measure (I use a Pyrex quart measure) and microwave them for 4-5 minutes, stirring the grape mixture every minute or so. Stir the water/cornstarch mixture into the grape mixture and microwave the mixture for 30 seconds. Stir the grape mixture well until it thickens. Spritz 4 ramekins or mini pie tins with non-stick cooking spray. Press a piece of puff pastry into the bottom of each ramekin, letting the corners of the pastry square rise up a little on the sides. You can save a little of the puff pastry, if you'd like, to decorate the tops of the tarts. Divide the grape mixture among the puff pastry-filled ramekins. Decorate the tops of the tarts with a little puff pastry and dust the pastry with a little sugar (or not). Put 2-4 ramekins in your air fryer basket, put the basket in the air fryer, and air fry the tarts for about 15 minutes until the pastry is golden and the filling is bubbly. Remove the tarts from the basket to cool for at least 10 minutes and repeat the cooking process with the remaining tarts if necessary.
