Have Leftover Chicken (or Turkey)? Make 20 Minute Skillet Chicken Pot Pie Gnocchi

If you're hungry and need a quick comfort meal, this is the one for you. You can have a warm, stick-to-your-ribs dinner on the table in about 20 minutes using leftover chicken (or turkey) and a package of shelf-stable gnocchi. It's chicken pot pie, but without the pie part. The dish is rich-tasting, full of vegetables, and filled with little gnocchi dumplings. I use potato gnocchi, but you can vary the gnocchi, if you'd like. The skillet meal is a little like a very thick soup or stew, and it's great on a cold night (and for lunches later!). Just serve the dish with a salad on the side and perhaps some hot biscuits, and you've got a great comfort meal. Enjoy!

Skillet Chicken Pot Pie Gnocchi -- Serves 4+


1 tablespoon of olive or canola oil

1 medium onion, chopped

1 cup of chopped or sliced carrots

1-2 ribs of chopped celery

2-3 cups of chopped, cooked chicken or turkey

1/2 teaspoon of salt

1/2 teaspoon of pepper

1/2 teaspoon of garlic powder

1/2 teaspoon of poultry seasoning

1/2 teaspoon of dried parsley flakes

3 cups of very hot water

2-3 teaspoons of chicken reduced sodium "Better than Bullion" or similar

16-18-ounce package of shelf-stable gnocchi

Chopped fresh parsley, optional


Heat the oil in a large skillet or chef's pan (non-stick is best), over medium heat. When the oil is hot, add the onion, carrots, and celery and saute them for about 10 minutes until they have softened considerably. Add the chopped chicken, salt, pepper, garlic powder, poultry seasoning, and parsley flakes and stir them into the vegetables. Add the water and bullion to the pan and bring the mixture to a boil. Stir in the gnocchi, reduce the heat to a low boil/simmer, and partially cover the pot. Let the mixture cook for 5-10 minutes, stirring it periodically, until the gnocchi have absorbed much of the liquid and the vegetables are tender enough for you. Some of the liquid should remain as a thick sauce (like in chicken pot pie!). Taste the mixture and add more salt and pepper to your taste. Sprinkle on the parsley, if you're using it, and serve the dish.
