Air Fryer Banana Chocolate Chip Breads

If you like moist, sweet, easy to make breads that are loaded with chocolate chips, this is the bread for you. You can mix up the bread in minutes using few utensils, and the bread bakes in about 20 minutes. The bread also is a great way to use up bananas that are past prime. You don't need fancy, weird ingredients, and the bread includes a few "healthy" ingredients so you can feel virtuous while you enjoy a tasty morning treat before working out (or after working out if you're really good--I'm not). I use walnuts in the bread, which provide a nice crunch and a bit of bitterness to offset the sweetness of the bananas and chocolate chips. You can leave out the nuts if you like or substitute another nut of your choice. Pecans and hazelnuts are both great.

Air Fryer Banana Chocolate Chip Bread -- Makes 4 Mini Loaves (5 x 3-inches or so)

1 cup of mashed banana

1/3 cup of canola oil

2/3 cup of buttermilk

1 large egg

1/3 cup of sugar

1/3 cup of brown sugar (preferably dark brown)

1 cup of all-purpose flour

1 teaspoon of baking powder

1/4 teaspoon of baking soda

1/4 teaspoon of salt

1/2 cup of quick oats

1/2 cup of chopped or broken walnuts, divided

1/2 cup of mini chocolate chips (or use the regular ones, if that's what you have--life will

go on, I feel sure, if you just don't have those mini chips)

Coat 4 mini loaf pans with non-stick cooking spray or, preferably, baker's spray (the stuff with flour in it). In a medium bowl or measure (I use a quart measure), whisk the mashed banana, oil, buttermilk, egg, and sugars together well. Stir in the flour, baking powder, baking soda, salt, and quick oats until well moistened. Stir in half the walnuts and the chocolate chips. Divide the batter among the mini loaf pans. Sprinkle the remaining walnuts on top of the batter in the pans. Set the air fryer temperature at 320 degrees and bake the loaves, two at a time, for about 20 minutes or until a pick inserted in the center of a loaf comes out with no wet batter attached. Let the breads cool in their pans for a few minutes before turning them out to cool completely. Repeat the process with the remaining batter.
