How to Make Easy, Inexpensive, Fruit-Sweetened Applesauce-Oat Cookies in Your Air Fryer (Diabetic Friendly, No Artificial Sweeteners)

These cookies are simple to make, inexpensive, and good. You can make them in your air fryer in 10-13 minutes. The cookies are soft and cake-like. They also are studded with coconut flakes, chopped walnuts, and sweet bits of date. The cookies are lightly sweetened, primarily with the applesauce and dates, rather than being loaded with processed sugar or artificial sweeteners. With plenty of fiber, protein, and "healthy fats," the cookies are great (in moderation, as always) if you're on a diabetic diet or want to "eat healthy." We like the cookies for a simple dessert and as a snack. The cookies also make great afternoon treats for kids with a glass of milk. Enjoy!

Fruit-Sweetened Applesauce-Oat Cookies (Diabetic Friendly) -- Makes 12
1/2 cup of unsweetened applesauce
1 tablespoon of milled or ground flax seeds
1/4 cup of canola oil
1 teaspoon of vanilla
1/8 teaspoon of butter extract, optional
1/4 cup of unsweetened flaked/shredded coconut
1/2 teaspoon of apple pie spice (or use cinnamon with a little nutmeg and allspice)
1/4 cup of chopped, toasted walnuts
1/2 cup of oat flour (just grind quick or old fashioned oats in a food processor)
1/4 teaspoon of baking powder
1/4 teaspoon of baking soda
1/4 teaspoon of salt
1/4 cup of oats (I use old fashioned)
6-8 large, pitted dates, chopped
In a large bowl mix together well the applesauce, milled flax seeds, oil, and extracts. Add the rest of the ingredients to the bowl and mix them in well. Cut small pieces of baking parchment to fit your air fryer basket. Drop 1 1/2 - 2-tablespoon scoops of dough on to the parchment, spacing the dough mounds about 2 inches apart. Flatten the dough mounds a little with damp fingers or the back of a spoon, so that the mounds are about 1/2-1-inch thick. Air fry the dough at 300 degrees for 10-13 minutes. Let the cookies cool on their parchment for a few minutes before removing them to cool completely.
