These rhubarb and apple biscuit tarts or filled biscuits are good and simple to make. The tarts are crispy on the edges and filled with a sweet-tart rhubarb and apple mixture that includes no refined sugar or artificial sweeteners--only fruit. The recipe uses date puree, which is good and easy to make (see https://www.thenfeedthem.com/post/how-to-make-date-puree-and-why-you-should-especially-if-you-re-diabetic-or-cutting-back-on-sugar ) You'll only need about a cup of chopped rhubarb, so if you have a small amount in your garden or on hand, you're in luck! If your rhubarb is red, you'll have nice, rosy centers in your biscuit tarts. If your rhubarb is greenish-hued, as mine is in the photos, the centers of your biscuit tarts will be green. Either the red or green rhubarb will work fine. The tarts are only a bit sweet, and include whole-grain white whole-wheat flour as well as milled flax seeds. In moderation (as always), the tarts are great if you're on a diabetic diet or want to "eat healthy." We like the tarts with dinner, breakfast, and as a simple snack with a cup of tea or coffee. Easy Rhubarb Biscuit Tarts (Diabetic Friendly) -- Makes 8


1 cup of white whole-wheat flour

1 tablespoon of milled/ground flax seeds

1 1/4 teaspoons of baking powder

1/4 teaspoon of salt

1/2 teaspoon of cinnamon

1/4 cup of canola oil

2 tablespoons of date puree

2 tablespoons of milk

Rhubarb-apple filling (see below)


In a large bowl combine the white whole-wheat flour, milled flax seeds, baking powder, salt, and cinnamon well. Add to the bowl the canola oil, date puree, and milk and mix them into the dry mixture until combined and a rough dough forms. Cut small pieces of baking parchment to fit your air fryer basket. Drop 1 1/2 - 2 tablespoon scoops of dough onto the parchment, leaving a couple of inches between the dough mounds. With your thumb or the back of a spoon make small depressions in the middle of the dough mounds to hold the filling. Fill each depression with 2-3 teaspoons of the rhubarb-apple filling (you'll have some filling left over, which you can use on toast, etc.). Air fry the biscuit tarts at 335 for about 10 minutes or until set and golden brown. Let the biscuit tarts cool on their parchment for about 5 minutes before removing them to cool completely.


Filling


1 cup of chopped rhubarb

1/2 cup of peeled, cored, and chopped apple (1 small apple)

2 tablespoons of date puree

1 tablespoon of water

1/4 teaspoon of cinnamon


In a medium bowl combine the rhubarb, apple, date puree, and water. Microwave the mixture on high for about 3 minutes or until the rhubarb has broken down. Stir the mixture well and microwave it another minute or so, if necessary, to break the rhubarb down and thicken the mixture. Stir in the cinnamon and use the mixture to fill the depressions in the biscuit tarts.
