Too Hot to Cook Dinner? Make Tuna Melts in Your Air Fryer

No, these aren't your usual tuna melts, they are a little different and special enough for dinner on those days when it's too hot to turn on the oven or you just have a can of tuna on hand. I first air fry sliced mushrooms and onions in the air fryer, which concentrates their flavor. Then the veggies go in a sauce mixture with the tuna. Swiss cheese goes into the sauce mixture and on top of the tuna melts, giving the melts a great nutty/cheesy taste and complementing the onions and mushrooms. I use whatever bread or bread-like option I have on hand for the base of the melts. In the photos below, I use lentil pancakes, which are different and really good! You could use slices of whole-wheat bread, English muffins, cornbread, etc.. Once assembled, the tuna melts air fry in 5-10 minutes. Enjoy!

Air Fryer Tuna Melts -- Makes 2

1/2 cup of chopped onion

4 ounces of sliced mushrooms

1/2 cup of light sour ceam

1/2 cup of plain Greek yogurt (fat free is fine)

2 tablespoons of grated Parmesan cheese

1/2 cup of shredded Swiss cheese

12 - ounce can of tuna, drained (cheap chunk light works just fine)

2 tablespoons of chopped chives (or use green onions)

Salt and pepper to taste

2 pieces of bread (or English muffins, cornbread, pancakes, etc.)

2 slices of Swiss cheese

Chopped parsley, tomatoes, etc., for garnish (optional)

Line the bottom and an inch or two up the sides of your air fryer basket with a piece of aluminum foil. Spritz the foil with non-stick cooking spray. Sprinkle the onions and mushrooms on the foil and spritz them with olive oil or non-stick cooking spray. Air fry the mushrooms and onions at 400 degrees for 10-15 minutes or until they have browned a little. Leave the foil in the air fryer basket and remove the veggies to a bowl. Add to the veggies the sour cream, Greek yogurt, Parmesan cheese, shredded Swiss cheese, tuna, chives, and salt and pepper. Put the pieces of bread on the foil in the air fryer. Divide the tuna mixture between the pieces of bread, smoothing the tuna mixture out a bit. Air fry the tuna melts at 360 degrees for about 5 minutes or until quite hot. Top each melt with a piece of Swiss cheese and air fry the melts for another 3 minutes or until the cheese melts to your liking. Use the foil to carefully lift the melts out of the air fryer basket. Top the melts with chopped parsley, tomatoes, etc., if you'd like.
