Quick Air Fryer Oatmeal, Coconut, Golden Raisin Cookies

Use your air fryer to turn out incredibly good oatmeal, coconut, golden raisin cookies in about 10 minutes. The recipe makes a small batch of cookies that are crispy on the edges and moist and chewy in the centers (or cook the cookies longer for crunchier cookies). Not to sweet, not too filled with fat, the cookies are just right for snacks or for an easy dessert. The cookies make great accompaniments to fruit or ice cream, too. I make the dough, make about half the batch in the air fryer, and stash the remainder of the dough in the refrigerator to make later. That way, I can have fresh, warm cookies in minutes. These really are quintessential "grandmother" type cookies--reasonably nutritious (for cookies, that is), addictive, and adaptable. That means, if you want to substitute chocolate chips for the raisins, you can. Or add nuts, if you'd like. I like the cookies "as is." They are simple and just plain good! Enjoy!

Air Fryer Oatmeal, Coconut, Golden Raisin Cookies -- Makes about 18


2 tablespoons of melted butter

2 tablespoons of canola oil

1 egg

1/4 cup of brown sugar

1/4 cup of sugar

1/2 teaspoon of vanilla

1/4 teaspoon of salt

1/2 cup of flour

1/4 teaspoon of baking soda

1/4 teaspoon of baking powder

1/4 teaspoon of cinnamon

1/4 teaspoon of nutmeg

1 cup of quick oats

1/4 cup of golden raisins

1/4 cup of shredded coconut


Cut small pieces of baking parchment, just large enough to fit in your air fryer basket. In a medium bowl, combine the butter, oil, egg, sugars, and vanilla and beat them well. Stir in the flour, baking soda, baking powder, cinnamon and nutmeg until combined. Stir in the oats, raisins, and coconut. Drop 1 1/2 tablespoons of dough onto the parchment sheets, about 3 mounds of dough to a sheet, spacing them as far apart as possible, and flatten the dough mounds slightly (enough to prevent them from rolling). Place a dough-topped parchment sheet in the air fryer basket and bake the cookies in the air fryer at 320 degrees for about 10 minutes. The cookies should be lightly browned and will appear slightly moist in the centers. That's fine. Remove the cookies from the air fryer basket and let them cool, while you bake another dough-topped sheet. The cooling cookies will firm up as they stand and should be crispy on the edges and chewy in the centers. Repeat the cooking/cooling process with the remainder of the dough. Alternatively, you can make as many cookies as you want/need and refrigerate the remaining dough, well wrapped in plastic, to cook another day.
