How To Make Easy, Inexpensive Tuna-Stuffed Bell Peppers (Diabetic Friendly, Air Fryer or Oven)

These tuna stuffed peppers are easy to make and far less expensive than traditional stuffed peppers made with ground beef. The tuna stuffed peppers also are low in fat and really good for you! With a mixture of vegetables, plenty of protein and fiber, and a minimum of "bad carbs," the stuffed peppers are great if you're on a diabetic diet or want to "eat healthy." I like to make the stuffed peppers in the air fryer, but you can bake them in a regular oven if you prefer. The recipe is designed for two people, and doubles easily to serve four. How do the tuna stuffed peppers taste? Great. Think of a tuna cake stuffed into a bell pepper with lots of flavor and a crispy top. This is an inexpensive as well as tasty dinner, and you may want to keep some cans of tuna on hand to make it often. It really is good! Serve the tuna stuffed peppers alongside a salad or green vegetable and whole-grain bread for a complete meal. Enjoy!

Tuna Stuffed Bell Peppers -- Serves 2
1 large bell pepper, preferably red, orange, or yellow
2 tablespoons of chopped onion
2 tablespoons of chopped celery
1 tablespoon of light mayonnaise
1 tablespoon of plain yogurt (or light sour cream)
1 teaspoon of Dijon mustard
1 teaspoon of lemon juice
1 large egg
1/4 teaspoon of pepper
1/4 teaspoon of garlic powder
1/2 teaspoon of dried parsley
1 small can of tuna (5-6 ounces), drained (yes, you can use the cheap light tuna--it's fine)
1/3-1/2 cup of seasoned Panko bread crumbs, preferably whole-wheat (reserve 2
teaspoons)
Spritz two small tins or baking dishes with non-stick cooking spray (I use mini pie tins or sometimes ramekins). Cut off the top of the pepper and then cut the pepper in half. Remove the seeds and inner membrane of the pepper. Place the pepper halves, cut sides up, in the prepared tins/dishes. Chop the bits of pepper from the top of the pepper (around the stem, which you can discard) and place the chopped bits in a medium bowl with the onion and celery and a teaspoon of water. Microwave the veggies for 30-60 seconds or until they soften. To the vegetables add the mayonnaise, yogurt, Dijon, lemon juice, egg, pepper, garlic powder, and dried parsley. Stir in the tuna, then just enough bread crumbs to make a cohesive mixture (save a couple of teaspoons of crumbs). Divide the tuna mixture between the pepper halves, stuffing it into the halves and mounding it up, if necessary. Sprinkle on the reserved two teaspoons of bread crumbs. Spritz the tops of tuna stuffed peppers with a little cooking spray or olive oil. You can cook the tuna stuffed peppers in the air fryer at 320 degrees for 18-22 minutes or in the regular oven at 350 degrees for about 25 minutes or until the stuffed peppers are a deep golden brown on top. Let the peppers cool a bit before serving them.
