No Butter Needed Air Fryer Chocolate Chip Cookies

No, you don't need butter for these cookies. Instead the cookies are made with olive oil, which gives the cookies incredible taste and texture. I sometimes have to bake the cookies one-by-one (they cook in 10 minutes in the air fryer), so that I am not tempted to eat just one more.... I usually opt for baking a half dozen or so cookies (I do share with my husband/family) and stash the rest of the dough in the refrigerator to bake later. The dough will keep for a week or two (maybe longer, but I've never gotten past week two). The cookies are slightly thick and a little chewy in the centers thanks to the oil and a quick cooking oats in the dough. I've used different types of chocolate chips, and I recommend using dark chocolate, slightly bittersweet chips. The dark chocolate helps balance out the sweetness of the cookies. That said, if you like really sweet cookies, you can use milk chocolate in them. I also like to use chopped hazelnuts in the cookies, which have a mild, distinctive, buttery taste, but you can vary the nuts to suit your taste or just leave them out. Although the olive oil in the cookies doesn't exactly make them "healthy," it does make them good! Enjoy!

Air Fryer Olive Oil Chocolate Chip Cookies -- Makes about 15

1/3 cup of olive oil (extra virgin)

1/2 cup of dark brown sugar

1/4 cup of sugar

1 large egg

1/2 teaspoon of vanilla

1 tablespoon of milk

1 1/4 cups of flour

1/4 cup of quick cooking oats

1/2 teaspoon of baking soda

1/2 teaspoon of salt

1/2 cup of chopped or broken nuts (hazelnuts, walnuts, pecans, etc.)

1 cup of dark chocolate chips

Cut small pieces of baking parchment to fit in your air fryer basket. In a medium bowl combine the olive oil, sugars, egg, vanilla, and milk. Stir in the flour, oats, baking soda, and salt just until no white streaks remain. Fold in the nuts and chocolate chips. Drop 1 1/2 tablespoon portions of dough onto each piece of parchment, spacing the dough portions at least 1 1/2 inches apart. Slightly flatten the dough mounds with your hand. Put one piece of dough-topped parchment in the air fryer basket, put the basket in the air fryer, and air fry the cookies at 320 for about 10 minutes. Remove the cookies from the basket to cool and repeat the cooking process with the remaining dough or make as many cookies as you want/need and stash the remaining dough in the refrigerator to bake later.
