How to Make Easy, Inexpensive Sourdough Apple-Caramel Waffles (Diabetic Friendly)

These sourdough waffles are easy to make and are less expensive and far better for you than the commercially-made waffles in a box. The waffles are soft, rise high and light, and are lightly sweetened with apples, applesauce, and sweet spices. With whole-grain, white whole-wheat flour, the waffles also are loaded with fiber. The waffles are great if you're on a diabetic diet or want to "eat healthy" (in moderation, as always!). I usually mix up the batter, refrigerate it overnight, and then bake the waffles in the morning. The waffles are great with maple syrup, or try them topped with a little Greek yogurt and applesauce for a more nutritious alternative. I also like the leftover waffles toasted and smeared with a little almond or peanut butter. Enjoy!

Sourdough Apple-Caramel Waffles (Diabetic Friendly) -- Serves 4+


1 cup of sourdough starter/discard

1/2 cup of milk

1 large egg

1/4 cup of canola oil

1/4 teaspoon of caramel extract (optional, but good)

1/2 cup of unsweetened applesauce

1 cup of white whole-wheat flour

1 1/2 teaspoons of baking powder

1/4 teaspoon of salt

1 teaspoon of apple pie spice (or substitute cinnamon)

1 medium peeled apple, chopped small (about a cup)


In a large bowl combine the sourdough starter/discard, milk, egg, canola oil, caramel extract, and applesauce and whisk them together well. Add to the bowl the flour, baking powder, salt, and apple pie spice and, with a spoon, stir them into the wet mixture until well mixed. Stir in the peeled apple. Cover the bowl with plastic wrap and let it sit on the counter for an hour or two, then refrigerate the mixture overnight. If you'd like to bake the waffles immediately, you can (the batter has sufficient baking powder in it to rise), but the sourdough taste won't be as pronounced, and the rise won't be as high. When you're ready to bake the waffles, either immediately or the next morning, stir the batter a little while the waffle iron heats, then make the waffles according to the waffle iron manufacturer's directions. I usually use about 1/3 cup of batter for each waffle. Serve the waffles warm with syrup, yogurt, applesauce, and/or nut butter.
