Make Low Sugar Apple-Oat-Walnut Cookies in Your Food Processor and Air Fryer (Diabetic Friendly, No Artificial Sweeteners)

These cookies are good--yes, really!--and good for you. They are sweetened with dates, apples, and raisins, not processed sugar or artificial sweeteners. The cookies are loaded with fiber and healthy protein and, in moderation (of course!), are great if you're on a diabetic diet or simply want to "eat healthy." The cookies are moist and chewy and spiced with cinnamon and apple pie spice (you can substitute a half teaspoon of extra cinnamon and 1/4 teaspoon each of nutmeg and allspice, if you don't have it). We like the cookies as a snack or simple dessert with a cup of coffee or tea. The cookies also make great "kid cookies" with a glass of milk, as they won't send your little ones into a sugar spin. Low Sugar Apple-Oat-Walnut Cookies (Diabetic Friendly) -- Makes 12+


1 cup of oats (old fashioned)

1/2 cup of pitted dates

3 small, cored apples (don't peel)

2 tablespoons of milled flax seeds

5 tablespoons of canola oil

1/4 cup of buttermilk, kefir, or plain yogurt

1 teaspoon of vanilla

1 cup of walnuts

1/2 teaspoon baking powder

1/2 teaspoon of baking soda

1/4 teaspoon of salt

1/2 teaspoon of cinnamon

1 teaspoon of apple pie spice

1/4 cup of raisins

Walnut halves (or pieces)


Put the oats into a food processor with the S-blade and process them until they are ground into a rough flour. Add the dates and process them in with the oat flour until the dates are completely chopped and you just see little bits of date mixed in with the oat flour. Add the apples to the processor bowl and pulse them into the flour and date mixture until chopped and incorporated. Add the flax seeds, oil, buttermilk (or kefir or yogurt), and vanilla to the food processor and process them into the mixture. Add the walnuts, baking powder, baking soda, salt, cinnamon, and apple pie spice and pulse them into the mixture until completely combined (the walnuts will be ground, and that's fine). Add the raisins and pulse them into the mixture just a few times. You want the raisins barely chopped. Cut small pieces of baking parchment to fit your air fryer basket and drop 12 scoops of the dough (about 2 tablespoons each) onto the parchment, leaving a couple of inches between the scoops. With damp hands or a spatula flatten out the dough until it's about 1/3-1/2-inch thick. Place a walnut half in the center of each cookie and press it in a little (or sprinkle walnut pieces on top of each cookie and press them in). Air fry the cookies at 310 degrees for 12-15 minutes (yes 310 degrees, because the oats will burn at too high a higher temperature). Let the cookies cool on their parchment for 5-10 minutes before removing them to cool completely (or eat). Store leftover cookies in the refrigerator.
