Make Easy, Fruit-Sweetened Chocolate Cupcakes in Your Air Fryer (Diabetic Friendly, No Artificial Sweeteners)

These simple cupcakes can be mixed up in minutes and they are deep, dark, and delicious! They are sweetened primarily with fruit, not refined sugar or artificial sweeteners. If you're on a diabetic diet or want to "eat healthy," the cupcakes are a great option, as they include plenty of fiber, protein, and other beneficial nutrients so are less likely than many desserts to cause blood sugar spikes. I like the cupcakes because they are moist and rich tasting--a bit like eating a dark chocolate truffle in taste. I usually make the cupcakes in the air fryer, but you can also bake them in a regular oven at 325 degrees for 20-25 minutes. The cupcakes are rich enough without frosting, but, if you'd like you can top them with some fresh strawberries, raspberries, or other fruit and perhaps a fluff of whipped cream or whipped topping. Easy Air Fryer Fruit-Sweetened Chocolate Cupcakes (Diabetic Friendly) -- Makes 12


1/2 cup of canola oil

1 large egg

1/2 cup of sour milk or buttermilk

1/2 - 3/4 cup of date puree (see my post on how to make it--it's easy)

1 teaspoon of vanilla

1/2 teaspoon of chocolate extract (optional, but good)

1/4 cup of unsweetened cocoa powder

1/2 cup of almond flour

1/4 cup of white whole-wheat flour

1/4 teaspoon of salt

1/2 teaspoon of baking powder

1/2 teaspoon of baking soda

1/3 cup of dark chocolate morsels or chips


In a large bowl whisk together well the oil, egg, milk, date puree, vanilla, chocolate extract, and cocoa powder. Add to the mixture the almond flour, white whole-wheat flour, salt, baking powder, and baking soda and whisk them in until combined. Stir in the chocolate morsels or chips. Spritz 12 muffin cups with non-stick cooking spray and divide the batter among the cups. Air fry the cupcakes at 315 degrees for 15-20 minutes or until a pick inserted in the center of a cupcake comes out with no wet batter attached. Let the cupcakes cool a few minutes before removing them from their cups.
