How to Make an Easy Sourdough Nutella Swirl Bread (Diabetic Friendly, Air Fryer or Oven)

This bread is simple to make and great for breakfast or snacks. The bread is made with white whole-wheat flour, which is whole-grain but lighter than regular whole-wheat flour, so it keeps the bread from being too heavy and dense. A swirl of home-made peanut butter nutella runs through the bread and adds a touch of sweetness as well as extra nutrition. Yes, the bread is "diabetic friendly"--as long as you don't eat too much! The bread is loaded with fiber, vitamins, and minerals, and has a bit of protein as well, thanks in part to the homemade nutella. How do you make the nutella? It's easy. Sourdough Nutella Swirl Bread (Diabetic Friendly) -- Makes 1 Loaf


1 cup of sourdough starter/discard

1/4 cup of canola oil

1/4 cup of milk

1 large egg

3/4 cup of white whole-wheat flour


In a large bowl mix together well the starter/discard, oil, milk, and egg. Stir in the flour until blended. Loosely cover the bowl with plastic wrap and let it sit for at least an hour (3-4 hours is fine, too). When you're ready, add to the bowl:


1 cup of white whole-wheat flour

1 1/4 teaspoons of salt


Stir, then knead in the flour and salt. Knead the dough for 3-5 minutes, adding in a little more flour, as needed, to prevent the dough from being too sticky to knead. Flatten the dough out into a rectangle that is about 1/2--inch thick. I just use my hands to flatten the dough, but a rolling pin is fine, too. Spread:


2/3 cup of nutella


evenly on top of the dough, leaving about 1/2-inch along the edges uncovered by the nutella. Roll up the dough jelly-roll-style, from one end. Turn the ends of the jelly-roll under to seal them and press the bottom seam into the dough a bit. Spritz a large loaf pan with non-stick cooking spray and place the dough into it. You can make 1/4-inch deep decorative slashes on the top of the loaf, if you'd like (it's not necessary). Spritz the top of the dough with a little oil or cooking spray and cover the dough loosely with plastic wrap. Let the dough rise until it increases in size by about one-third.

Air Fryer: Air fry the dough at 320 degrees for about 30 minutes or until golden brown and an instant-read thermometer registers 190-200 degrees.

Oven: Preheat the oven to 350 degrees. Bake the dough for 35-45 minutes or until golden brown and an instant-read thermometer registers 190-200 degrees.
