That's right. These cookies will use up a cup of your sourdough discard. You won't need baking powder or soda for the cookies unless your starter/discard is weak. If it is, go ahead and add 1/2 teaspoon of baking soda when you add the flour. You can make the cookies in the regular oven or using your air fryer, if you have one. The cookies are soft, a little cake-like, and similar to pillowy molasses cookies. With a sourdough tang from the discard, the cookies' flavor gets a boost from sweet spices and a little molasses. The recipe makes about a dozen cookies. If you don't want to make all the cookies at once, feel free to refrigerate some of the dough to bake later. The flavor of the cookies actually improves if you refrigerate the dough before baking it. The cookies are great with tea or coffee for a snack as well as for dessert or as an accompaniment to ice cream or fruit. Enjoy!
Sourdough Spice Cookies -- Makes 12-15
1 cup of sourdough starter/discard
1/3 cup of canola oil
1 large egg
2 tablespoons of molasses
1/2 cup of sugar
1 1/2 cups of flour
1 teaspoon of ground ginger
1/2 teaspoon of cinnamon
1/4 teaspoon of allspice
1/4 teaspoon of cloves
1/4 teaspoon of allspice
1/4 teaspoon of salt
1/2 teaspoon of baking soda (use if your discard is weak)
In a large bowl, combine the discard, oil, egg, molasses, and sugar well. Stir in the flour, spices, salt, and baking powder, if you're using it. Line a baking sheet with parchment paper or cut small pieces of parchment to fit in your air fryer basket. Drop 1 1/2 tablespoon portions of dough on the parchment, spacing the dough mounds a couple of inches apart. Moisten the top of the dough mounds with a little water, flattening them slightly, and sprinkle them with sugar. Let the dough mounds rise for an hour or two or until they puff slightly. If you're using the regular oven, bake the cookies at 350 degrees for about 15 minutes or until puffed and set. If you're using the air fryer, place a dough-topped piece of parchment in the air fryer basket, put the basket in the air fryer, and air fry the cookies at 320 degrees or until puffed and set. Remove the baked cookies from the air fryer basket and repeat the cooking process with the remaining dough. Let the baked cookies cool a few minutes before removing them from the parchment.
