This simple cube steak recipe takes minutes to put together, and you can air fry the steaks in 7-8 minutes. The inexpensive steaks comes out of the air fryer tender and full of flavor. The secret is to marinate the meat first, then cook it for only a short time. If you cook the steaks past 145 degrees (use a meat thermometer), they will be chewy. Cube steak is simply a tougher cut of beef--often round steak--that has been run through a meat tenderizer to make it easier to eat. Cube steak generally is very lean and usually benefits from a long, slow braise, but a quick stint in the air fryer also works to keep it tender. In this recipe, a simple balsamic vinegar marinade gives the cube steaks great flavor and keeps them low in carbohydrates. The lean steaks are great if you're on a diabetic diet or want to "eat healthy." Enjoy!

Air Fryer Marinated Cube Steaks (Diabetic Friendly) -- Serves 4

1 - 1 1/4 pounds of cube steak pieces (each about 1/4-1/3-inch thick)

1/4 cup of balsamic vinegar

2 tablespoons of olive oil

1 teaspoon of onion powder

1/2 teaspoon of garlic powder

1/4 teaspoon of salt

1/4 teaspoon of pepper

1/2 teaspoon of sweet paprika

1 teaspoon of prepared mustard (I use Dijon)

2 teaspoons of Worcestershire sauce

Spritz an 8-inch pan (or whatever size will fit in your air fryer basket) with non-stick cooking spray and place the steaks in the pan. In a small bowl or measure mix together well the balsamic vinegar, oil, onion powder, garlic powder, salt, pepper, paprika, mustard, and Worcestershire sauce. Pour the mixture over the cube steak pieces, turning the steaks over to cover both sides of the steaks with some of the marinade. Let the cube steaks stand at room temperature for 20-30 minutes or refrigerate them for longer (you can prepare the steaks early in the day and let them marinate in the refrigerator until dinner time). When you are ready to cook the steaks, cook them in one layer (if your pan is small, you'll have to cook the steaks in batches), leaving the marinade on the meat for extra flavor. Air fry the steaks at 400 degrees for 7-8 minutes or until an instant-read thermometer inserted into the thickest part of a steak registers 145 degrees. Let the steaks stand for at least 5 minutes before serving them.
