These pork chops cook in 10-15 minutes in your air fryer and they come out moist and juicy. The easy main dish takes minutes to put together, and you can make the sauce in the microwave while the pork begins cooking. The sauce is a simple mixture of orange juice, a little cinnamon and ginger, and a bit of cornstarch--no added sugar, making the chops acceptable on a diabetic diet (or for those just wanting to "eat healthy"). The coconut comes in near the end of the cooking time, and it adds a nice, different flavor to the mild pork. We like the dish with broccoli on the side, which contrasts well with the pork and is great with any extra sauce. Enjoy!
Air Fryer Orange-Coconut Pork Chops -- Diabetic Friendly -- Serves 2+
2 boneless pork chops, 1 - 1 1/2-inches thick
1/4 teaspoon of salt
1/4 teaspoon of pepper
1/4 teaspoon of garlic powder
1/4 cup of orange juice
1/4 teaspoon of cinnamon
1/4 teaspoon of ground ginger
1/2 teaspoon of cornstarch
2 teaspoons of unsweetened coconut
Spritz with non-stick cooking spray a small piece of aluminum foil that will fit in the bottom of your air fryer and an inch or so up the sides of the basket. Put the foil in the basket and pat the pork chops dry with a paper towel. Season the pork chops on each side with salt, pepper, and garlic powder and put them on the foil in the basket, separating the chops by an inch or so. Spritz the chops with a little cooking spray or olive oil. Air fry the chops at 360 degrees for 6 minutes, then turn them over and cook them for 6 minutes more. Sprinkle the top of each chop with a teaspoon of the coconut, then drizzle/pour some of the sauce (see below) on each chop. Air fry the chops for two or three minutes more or until the chops reach an internal temperature of 145 degrees. Don't cook the chops to much more than 145 degrees, or they will toughen! Let the chops stand for a few minutes and serve them.
Sauce
While the pork chops are starting to cook, mix the orange juice, cinnamon, ginger, and cornstarch together in a cup or small bowl. Microwave the mixture for 30 seconds, stir it, then microwave it for another 30 seconds or until it thickens. Drizzle/pour some of the sauce on each chop just before the chops are finished cooking.
