These simple cashew cookies are sweetened with date puree, no sugar or artificial sweeteners, and they are really good for cookies that are nutritious. The cookies are only mildly sweet and they are a bit nubby with tiny bits of toasted ground cashews in them. Toasting the cashews heightens their flavor (I toast them in the air fryer), so, if you like cashews, these are the cookies for you! The cookies, in addition to being low in sugar, also include oats and flax seeds and get their "healthy fat" from the nuts and from a bit of canola oil--no butter. If you're on a diabetic diet or just want to "eat healthy", the cookies make a great treat (in moderation, of course). I make the cookies in the air fryer, and you also can bake them in a regular oven at 350 degrees for about 15 minutes. We like the cookies with fruit or with a cup of coffee or tea. Enjoy!
Low Sugar Cashew Cookies -- Makes 12+
1/4 cup of date puree (barely cover pitted dates with boiling water, let them stand until
warm, and then mash them, without draining them, for the puree)
2 tablespoons of milled flax seeds
1/4 cup of milk
2 tablespoons of canola oil
1 teaspoon of vanilla
1/8 teaspoon of salt
1/2 teaspoon of baking powder
1/4 teaspoon of baking soda
1 cup of toasted, ground cashews
1/4 cup of oat flour (grind old fashioned or quick oats in a food processor)
In a large bowl combine the date puree, milled flax seeds, milk, oil, vanilla, and salt until completely mixed. Stir in the baking powder, baking soda, ground cashews, and oat flour until combined. Cover the bowl and let the mixture sit for at least 30 minutes, then stir the dough again. Cut small pieces of baking parchment to fit your air fryer basket and drop scoops of cookie dough (1 1/2 - 2 tablespoons) onto the parchment. Flatten out the mounds of dough to rounds about 1/2-inch thick, leaving at least an inch in between the rounds. You can make cross-hatches with a fork, if you'd like, but it's not necessary. Air fry the cookies at 325 degrees for 10-13 minutes or until a deep golden brown.
