How to Make Easy, Inexpensive Chicken Souvlaki (Greek) Meatballs in Your Air Fryer (Diabetic Friendly, No Eggs Needed)

These meatballs are incredibly easy to make with everyday ingredients, and they are really good. The meatballs come out of the air fryer moist and tender and full of flavor. I use inexpensive ground chicken to make the meatballs, but you can use ground turkey, if that's what you have on hand. The meatballs get an extra boost of protein from cottage cheese, which also helps keep the meat tender. If you're on a diabetic diet or want to "eat healthy," the meatballs are great. They are high in lean protein and low in carbohydrates. We like the meatballs plain or with a simple cucumber and yogurt sauce. Enjoy!

Air Fryer Chicken Souvlaki (Greek) Meatballs -- Makes 9-12 Meatballs
1 pound of lean ground chicken
2/3 cup of cottage cheese (low-fat)
1/2 teaspoon of garlic powder
1/2 teaspoon of dried thyme
1/2 teaspoon of dried oregano
1/2 teaspoon of dried dill
1 teaspoon of onion powder
1 teaspoon of dried parsley
1/4 teaspoon of pepper
1/2 teaspoon of salt
2 tablespoons of grated Parmesan cheese
2 tablespoons of quick oats
1 teaspoon of lemon juice
Line your air fryer basket with aluminum foil and spritz the foil with non-stick cooking spray or spritz an aluminum foil pan that will fit in your air fryer basket with spray. In a large bowl mix together well the ground chicken and cottage cheese. Add the remaining ingredients and mix them together well with the chicken/cottage cheese. Form 9-12 meatballs (a little smaller than a golf ball) and place them on the prepared foil/in the pan, not touching, if possible. Air fry the meatballs at 360 degrees for 10-15 minutes or until lightly browned and the meatballs reach an internal temperature of 165 degrees.
