How to Make Fruit-Sweetened Mini Pies in Your Air Fryer With a Can of Peaches (Diabetic Friendly, No Artificial Sweeteners)

These little pies are good and are sweetened with fruit, not refined sugar or artificial sweeteners. I use a can of peaches in juice (or you can go for extra-light syrup, if that's what's available) for the pie filling, and the peaches are just sweet enough for us. A simple piecrust made with white whole-wheat flour lines mini pie tins. The topping for the pie consists of some of the piecrust mixture, crunchy sliced almonds, and a little cinnamon. If you're on a diabetic diet or want to "eat healthy," the pies are a good treat option. The recipe makes four little pies. I like to make them in the air fryer, which keeps the crust crispy and the kitchen heat down. The pies also reheat well in the air fryer. Enjoy!

Air Fryer Fruit-Sweetened Mini Peach Pies (Diabetic Friendly) -- Makes 4
14-15-ounce can of sliced peaches in juice (or extra-light syrup), drained, but 1/2 cup of
the juice reserved
2 teaspoons of cornstarch
1/2 teaspoon of cinnamon
1/2 teaspoon of vanilla
Cut the peach slices into bite-sized pieces, if you'd like and add them to a microwave-safe bowl or measure. Add 1/4 cup of the peach juice and microwave the peaches and juice for a minute. Add the cornstarch to the remaining 1/4 cup of juice and mix it in until blended. Stir the mixture into the hot peaches and microwave the peaches/cornstarch mixture for another minute or two--stirring it every 30 seconds--or until the peach mixture thickens. Stir in the cinnamon and vanilla. Set the peach mixture aside. Spritz four mini pie tins with non-stick cooking spray. Make the piecrust/topping mixture below and line the pie tins with half of the dough (just pat the dough into the pans--no need to roll). Divide the peach filling among the four tins (you may have a little extra filling--save it to top yogurt, oatmeal, pancakes, etc.). Make the topping with the remainder of the dough (see below) and crumble the topping over the peach filling in each tin. Air fry (you can use the "bake setting" on your air fryer, if you like, or the "air fry" setting) the pies at 330 degrees for about 20 minutes or until bubbly and a deep golden brown.
Piecrust and Topping
1 cup of white whole-wheat flour
1/4 teaspoon of salt
1/4 teaspoon of baking powder (yes, that's right!)
4 tablespoons of butter cut into smallish pieces
1 1/2 tablespoons of canola oil
2 1/2 tablespoons of milk
1/4 cup of sliced almonds
1/2 teaspoon of cinnamon
1/4 teaspoon of almond extract
In a large bowl or measure mix together well the flour, salt, and baking powder. Cut in the butter with a fork until small bits form. Drizzle in the canola oil and mix it in with the fork. Add the milk and mix it in until the dough comes together (it will still be a bit crumbly). Divide the dough in half. Divide one-half of the dough into four equal portions and pat one of the four portions into each of four mini pie tins that you have spritzed with non-stick cooking spray. To the other half of the dough, add the sliced almonds, cinnamon, and almond extract and mix everything together. This mixture will form the crumbs to top the pies.
