How to Make Easy Stuffed Eggplants Parmesan in Your Air Fryer (Diabetic Friendly)

These little stuffed eggplants are good and easy! I use the "baby" or Indian eggplants in the recipe, which are the little round or oval eggplants. The small eggplants are less bitter than the large "American" eggplants. You simply trim them, scoop out the pulp, and air fry them for about 10 minutes before stuffing them with a savory mixture that includes Parmesan and a shredded Italian cheese blend. The stuffed eggplants need only another 10 minutes of cooking time, and they'll be ready for dinner. Hearty enough for a main dish, the eggplants also make a special side dish alongside meats. The eggplants are great if you're diabetic or want to "eat healthy," as eggplants are low in calories and carbohydrates, high in fiber and antioxidants, and contain compounds that can help with blood sugar regulation. They also taste really good, especially when air fried with tomato sauce and cheese! Enjoy!

Stuffed Eggplants Parmesan -- Serves 4


4-6 small, Indian or baby eggplants, washed and trimmed

1/2 cup of chopped onion

1/4 teaspoon of salt

1/4 teaspoon of pepper

1/4 teaspoon of garlic powder

2 tablespoons of grated Parmesan cheese, divided

1-2 tablespoons of shredded Italian cheese blend

2 tablespoons of seasoned panko bread crumbs (whole-wheat, if you can find it), divided

1/3 cup of tomato paste


Spritz an 8-inch pan with non-stick cooking spray and set it aside. Cut the eggplants in half, lengthwise (from stem to blossom end). Scoop out the pulp with a sharp spoon, leaving a shell about 1/4-1/3-inch thick, and put the pulp in a medium microwave-safe bowl. Arrange the scooped out eggplant shells in the prepared pan, scooped out part face-up. Spritz the eggplant with a little olive oil or non-stick cooking spray. Air fry the eggplant shells at 385 degrees for about 10 minutes or until they are soft and a bit toasty. While the eggplants are in the air fryer, add the to the pulp in the bowl the chopped onion, salt, pepper, and garlic powder. Stir everything well and microwave the mixture for 3-4 minutes or until the onion and eggplant pulp soften. Stir in 1 tablespoon of the grated Parmesan cheese, the shredded Italian cheese blend, 1 tablespoon of the panko, and the tomato paste. Mix everything well and, when the eggplant shells have finished in the air fryer, stuff them with the vegetable/cheese mixture. Sprinkle the tops of the stuffed eggplants with the remaining panko and Parmesan cheese. Spritz the tops with a little olive oil or cooking spray, and air fry the stuffed eggplants at 385 degrees for 4-5 minutes (or until they've browned a bit). Then turn down the temperature to 320 degrees, and air fry the stuffed eggplants for another 5 minutes. Let the eggplants cool a little before serving them.
