How to Make Easy, Inexpensive Sauerkraut with Apples and Raisins in Your Air Fryer (Diabetic Friendly)

This sauerkraut recipe is easy, inexpensive, and good comfort food. It's great with pork chops, ham, or even chicken. I sometimes also cook the sauerkraut briefly, then put a small pork roast or pork chops atop the sauerkraut mixture. The flavor of the sauerkraut with the juices from the pork is incredibly good! The dish makes a great side if you're on a diabetic diet, as it's low in "bad carbs" and loaded with fiber and other nutrients. Enjoy!

Air Fryer Sauerkraut with Apples and Raisins (Diabetic Friendly) -- Serves 4
16 ounces of sauerkraut, rinsed well
1/2 medium onion, chopped
1 large apple, cored and chopped
1/4 teaspoon of onion powder
1/4 teaspoon of dried parsley
1/4 teaspoon of ground coriander
1/4 teaspoon of smoked paprika
1/4 teaspoon of garlic powder
1/4 teaspoon of pepper
2-4 tablespoons of raisins
1/2 teaspoon of caraway seeds, optional but good
Spritz an 8-inch pan or dish (I use a disposable aluminum foil pan for easy cleanup and because it fits well in my air fryer) with non-stick cooking spray. Put the sauerkraut, onion, apple, and spices in the pan and mix them together well. Air fry the mixture at 320 degrees for about 20 minutes or until the apples and onions are getting tender. Stir in the raisins and caraway seeds and cook the mixture for another 5-10 minutes or until the apples are tender and the mixture is golden brown. Stir the mixture well before serving it.
