How to Make Easy Sourdough Bacon and Cheddar Cheese Swirl Bread (Diabetic Friendly)

This simple-to-make sourdough bread is loaded with good things and great for breakfast, lunch, and dinner. A swirl of bacon bits, cheddar cheese, and green onions runs through the bread and enhances the sourdough tang. Made with white whole-wheat flour, the bread is loaded with nutrition, and, in moderation (of course!), the bread is acceptable if you're on a diabetic diet. I make the bread in the air fryer (try using an aluminum foil pan from a take-out burrito if your regular loaf pan won't fit in your air fryer), but you can bake the bread in a regular oven at 350 degrees for about 45 minutes, if you prefer. The bread is wonderful while warm, but it slices best after it has cooled completely. I like to warm slices in the air fryer to recrisp the bacon and remelt the cheese and occasionally pop a piece or two in the toaster to serve with eggs. Enjoy!

Easy Sourdough Bacon and Cheddar Cheese Swirl Bread (Diabetic Friendly) -- Makes 1 Loaf


1 cup of sourdough starter/discard

1/4 cup of canola oil

1 large egg

1/3 cup of milk

1 cup of white whole-wheat flour


In a large bowl mix together well the starter/discard, oil, egg, and milk. Stir in the flour until combined. Loosely cover the bowl with plastic wrap and let the mixture sit for at least an hour. Several hours is fine, too. When you're ready, add to the mixture:


1 cup of white whole-wheat flour

1 1/2 teaspoons of salt


Stir, then knead in the flour and salt, then knead the dough for 3-5 minutes, adding in a bit more flour as you knead to prevent the dough from being too sticky to knead. With your hands, pat the dough into a rectangle about 1/2 inch thick. Sprinkle the top of the dough rectangle evenly with:


1/4 cup of chopped green onion

1 cup of shredded cheddar cheese (I use sharp cheddar or "triple cheddar")

2-4 tablespoons of bacon crumbles (pre-cooked, packaged crumbles are fine)


Roll up the dough, jelly-roll style, tucking the ends underneath and poking any filling back inside the dough roll. Spritz a loaf pan with non-stick cooking spray and place the dough into the pan, seam-side down. Spritz the top of the dough with non-stick cooking spray or oil and loosely cover the dough with plastic wrap. Let the dough rise until it has increased in volume by about one-third. You can use a sharp knife to make 1/4-inch deep slashes on top of the loaf if you'd like (but it isn't essential).

Air Fryer: Air fry the bread at 320 degrees for 30-35 minutes or until it is golden brown and reaches an internal temperature of about 190 degrees.

Oven: Preheat the oven to 350 degrees and bake the bread for about 45 minutes or until it is golden and reaches an internal temperature of about 190 degrees.
