These pork chops are easy to make and good! You can make them in about 10 minutes in the air fryer, and the chops come out tender, juicy, and full of flavor. You can serve them plain, or, if you have the time, make a simple tomato topping for the chops. I like the chops both ways. The chops are low in carbohydrates and are great if you're on a diabetic diet (just don't add too many bread crumbs on top). Even better, the chops don't require fancy or hard to find ingredients, making them easy to prepare and less expensive than many dishes. We like the chops with the topping and/or a vegetable and a salad. Enjoy!
Air Fryer Italian Seasoned Pork Chops -- Serves 3 - 4 (Half a Chop, Each)
2 boneless pork chops, each 6-8 ounces and about 1 - 1 1/2-inches thick
1/2 teaspoon of Italian seasoning
1 - 2 tablespoons of grated Parmesan cheese
1/4 teaspoon of salt
1/4 teaspoon of pepper
1 tablespoon of Italian-seasoned Panko bread crumbs
Spritz a small sheet of aluminum foil that will fit in the bottom of your air fryer basket and an inch or two up the sides with non-stick cooking spray and put it in the bottom of your air fryer basket. Put the pork chops on the foil in the basket, placing them so they aren't touching. In a small cup or bowl combine the Italian seasoning, Parmesan, salt, and pepper. Sprinkle the seasoning mixture evenly on both sides of the pork chops and spritz the seasoned chops well with olive or canola oil. Air fry the chops at 360 degrees for 5 minutes. Flip the chops over and sprinkle the panko evenly over what will now be the tops of the chops. Spritz the panko-topped chops again with olive or canola oil and air fry them for another 5 minutes or until they reach an internal temperature of 145 degrees. Remove the chops from the air fryer and let them sit for a few minutes before serving them, with or without the topping.
Tomato Topping
3/4 - 1 pound of fresh tomatoes, cored and chopped*
1 teaspoon of Italian seasoning
1/2 teaspoon of dried basil
2 tablespoons of grated Parmesan cheese
1 - 2 teaspoons of olive oil
Salt and pepper to taste
1/4 cup of shredded Italian cheese
In a microwave-safe bowl or measure (I use a Pyrex quart measure) combine the tomatoes, Italian seasoning, basil, Parmesan, olive oil, and salt and pepper. Microwave the mixture for 5-6 minutes or until the tomatoes break down and the mixture is hot and bubbling. Top the chops with the mixture and then sprinkle on the shredded Italian cheese.
*Yes, you can use a can of diced tomatoes, undrained, if you don't want to use fresh tomatoes. You can reduce the microwave time to 3-4 minutes if you use the canned tomatoes.
