How to Make Easy, Inexpensive, No Sugar Added, Crunchy Peanut Butter Granola in Your Air Fryer (Diabetic Friendly)

I've been on a granola kick lately, and this is my latest version, which is loaded with peanut flavor and crunchy but not tooth shattering. The granola is easy to make, and it doesn't require a lot of weird, hard-to-find ingredients. I use date puree to sweeten and help bind the granola together into little mini clumps (see: https://www.thenfeedthem.com/post/how-to-make-date-puree-and-why-you-should-especially-if-you-re-diabetic-or-cutting-back-on-sugar ). The date puree is simple to make (you just need dates and water), and you won't need any refined sugar in the granola. With lots of protein, fiber, vitamins, and minerals, the granola is great if you're on a diabetic diet or want to "eat healthy." We like the granola for breakfast. My husband likes it on top of hot cereal, and I eat the granola on top of fruit and Greek yogurt. The granola also would be great as a topping for baked fruit. Enjoy!

No Sugar Added Crunchy Peanut Butter Granola -- Makes Two 8-Inch Pans


2 cups of rolled oats (old fashioned)

2 tablespoons of milled flax seeds

1/2 teaspoon of salt

1/4 cup of oat flour (just grind rolled oats in a food processor)

1/2 teaspoon of cinnamon

1 1/2 cups of dry-roasted, unsalted peanuts, coarsely chopped

1/4 cup of canola oil

1/3 cup of date puree

1/3 cup of peanut butter

1 teaspoon of vanilla

1 egg white


In a large bowl mix together well the oats, milled flax seeds, salt, oat flour, cinnamon, and peanuts. Add to the bowl the canola oil, date puree, peanut butter, vanilla, and egg white and mix everything together well until completely combined and all the dry ingredients are coated and moistened. Spritz two 8-inch pans well with non-stick cooking spray or line the pans with aluminum foil and spritz the foil with spray (for easier cleanup). Divide the granola mixture evenly between the two pans and press it into the pans in even layers. Spritz the top of the mixture in each pan with a little non-stick cooking spray. Air fry the granola at 285 degrees for about 30 minutes or until a deep, golden brown. Let the granola cool completely in the pans. Then lift it out and break/crumble it and store the granola in airtight containers.
