This tilapia is easy to make and quick to cook in your air fryer. You also can bake it in a 400 degree oven for 20 minutes, if you'd prefer. The tilapia comes out moist on the inside and with a nice, crunchy topping of buttery cashew nuts. The topping includes Greek yogurt and a little coconut flour, which "lighten" up the dish, as compared to a traditional mayonnaise topping. This really is a simple to prepare main dish that's easy on the budget as well as being quite tasty. Enjoy!
Air Fryer Cashew-Topped Tilapia (Diabetic Friendly) -- Serves 2+
3/4 pound of tilapia filets
2 tablespoons of plain Greek yogurt (fat free is fine)
1/4 teaspoon of lemon pepper
1/4 teaspoon of salt
1 1/2 tablespoons of coconut flour
1 1/2 tablespoons of chopped, toasted cashew nuts
Tear off a piece of aluminum foil large enough to fit in your air fryer basket and an inch or two up the sides of the basket. Put the foil in the basket and spray the foil with non-stick cooking spray. Pat the fish dry with a paper towel and cut the filets in half along the vertical line that runs up the center of the filets. Place the fish on the foil with the thickest sides of the filets placed toward the outside edges of the basket and the thin pieces overlapping a bit in the middle of the basket (to try to get a uniform thickness). Smear the yogurt evenly on top of the filets. Sprinkle on the lemon pepper and salt, then sprinkle on the coconut flour evenly. Sprinkle on the chopped cashews and press them lightly into the yogurt/coconut flour. Spritz the tops of the filets with a little olive oil or non-stick cooking spray. Air fry the filets at 360 degrees for about 15 minutes or until the fish flakes with a fork.
