These little cole slaw balls are really good! Your kids are even likely to eat them (you don't have to tell the kiddies that the balls are good for them!). Simple to make, the cole slaw balls air fry in about 15 minutes and come out crispy on the outside, deeply browned, and moist and tasty on the inside. In addition to the cabbage mixture, the balls benefit from some onion, Parmesan and Swiss cheeses, and a surprising ingredient--instant potato flakes. The potato flakes give the balls substance and help hold them together. Try the cole slaw balls with baked meats or chicken for a different and exceptionally tasty side dish. Enjoy!
Air Fryer Cole Slaw Balls -- Makes 4
1 1/2 cups of bagged cole slaw mix (the kind with carrots in it, preferably)
1/4 cup of chopped onion
1/4 teaspoon of pepper
1/4 teaspoon of salt
1/4 teaspoon of dried parsley flakes
1/4 teaspoon of dried dill
1/4 teaspoon of caraway seeds (optional--use if you like them and have them)
1 tablespoon of grated Parmesan cheese
2-3 tablespoons of shredded Swiss cheese
1-2 tablespoons of instant potato flakes
Cut a small piece of baking parchment to fit your air fryer basket and put it in the basket. In a medium bowl combine the cole slaw mix, the onion, pepper, salt, parsley flakes, and dried dill with a tablespoon or so of water. Microwave the mixture for a couple of minutes at high or until the veggies begin to wilt a bit. Let the mixture cool a few minutes then, while still warm, stir in the caraway seeds (if you're using them), the Parmesan and Swiss cheeses, and the potato flakes. Start with a tablespoon of the potato flakes and add a little more if necessary until the mixture comes together and forms a moist mass. With damp hands form four small balls with the cole slaw mixture and place them on the parchment paper, spacing the balls a little apart (about half an inch is fine) so they don't touch. Spritz the balls with non-stick cooking spray. Put the air fryer basket with the balls in it into the air fryer, set the temperature at 360 degrees, and air fry the cole slaw balls for 10 minutes. Lower the heat to 320 degrees and air fry the balls for another 5 minutes or until a deep golden brown. Serve the balls hot or warm.
