Air Fryer Cottage Cheese Breakfast Quiches: Great for Diabetics (and Everyone Else)
These are low-carbohydrate, protein-rich, no-crust quiches that are nutritious and helpful if you need to control blood sugar spikes. The little quiches also are quick to make in the air fryer and taste really, really good--whether you are diabetic or not! Cottage cheese provides creaminess to the quiches as well as low-fat protein, and a bit of cheddar cheese adds extra flavor. I like to top the unbaked quiches with sliced cherry tomatoes, but slices of larger tomatoes also work well. The quiches are good for breakfast, and they also make nice, light lunches or even dinners. You can make the quiches ahead of time, refrigerate them, and reheat them in the microwave (about a minute at 50 percent power) when you need them. Enjoy!
Air Fryer Cottage Cheese Breakfast Quiches -- Makes 4
2/3 cup of low-fat cottage cheese
2 large eggs
1 tablespoon of ground flax seeds (flax seed meal)
2 - 3 tablespoons of shredded cheddar cheese
1/4 teaspoon of pepper
1/4 teaspoon of onion powder
1/4 teaspoon of dried dill
Handful of sliced cherry tomatoes or a couple of slices of larger tomatoes
Spritz four small non-stick pie tins or ramekins with non-stick cooking spray. In a medium bowl whisk together well everything but the tomatoes. Divide the mixture among the tins/ramekins. Arrange the tomatoes on the top of the mixture, pressing them slightly into the egg mixture. Air fry the quiches at 320 degrees for about 15 minutes or until the quiches are golden brown and the edges just barely pull away from the sides of the tins. You may have to air fry the quiches in batches, depending on the size of your air fryer. Let the quiches cool a few minutes before turning them out to serve them or just eat the quiches from the tins.
