A Dinner Your Kids Will Eat: Curly Fry and Hamburger Skillet

This meal is easy, quick, and calls for ingredients you probably have on hand or that are readily available. the Curly Fry and Hamburger Skillet also is quite good! Good enough that your kids are likely to eat it, and, if they don't, you will! The skillet meal is simpler than cooking burgers and has all the required "hamburger" tastes. A ground beef mixture gets a topping of crispy curly fries and then a "special sauce" that tastes similar to the famous sauce that tops the burger from the golden arches. Nonetheless, this skillet meal probably includes far less fat, sodium, and other bad things than that golden arches meal. If you have any leftovers, they make great lunches. Enjoy!

A Dinner Your Kids Will Eat: Curly Fry and Hamburger Skillet

Curly Fry and Hamburger Skillet -- Serves 4

2/3 of a 24-ounce bag of frozen curly fries

2-3 teaspoons of canola oil

1 medium onion, chopped

16 - 20 ounces of lean ground beef (93 percent)

1/2 teaspoon of salt

1/2 teaspoon of pepper

1/2 cup of ketchup

2 tablespoons of Dijon mustard

1/4 cup of pickle relish (sweet or dill--whatever you like)

1/4 cup of water

1/4 cup of sour cream (optional but good)

1-2 chopped green onions

Special Sauce

1/4 cup of mayonnaise

1/4 cup of sour cream or plain yogurt

1/4 cup of ketchup

1/2 teaspoon of onion powder

1 teaspoon of Worcestershire sauce

Cook the curly fries according to the package directions or, my preference, toss them with a little oil (1-2 teaspoons) or spritz them with non-stick cooking spray and cook them in an air fryer at 400 degrees for 10-15 minutes until they are hot and crispy. While the fries are cooking, heat the oil over medium-high heat in a large skillet or chef's pan. When the oil is hot, add the onion and saute it for a few minutes. Crumble in the ground beef and sprinkle it with the salt and pepper. Saute the beef and onion for about 8-10 minutes or until the beef is cooked through and browned a bit. Stir in the ketchup, mustard, pickle relish, and water. Turn down the heat to medium-low and let the mixture simmer for 5-6 minutes. While the mixture is simmering, make the sauce by stirring all the sauce ingredients together in a small bowl or measure. Stir the sour cream, if you're using it, into the beef mixture and turn off the heat. Top the beef with the curly fries and pour/drizzle the special sauce over the fries. Sprinkle the green onions over the sauce. You can also drizzle on more ketchup, if you'd like.
