Air Fryer Cookies: Chocolate-Oat Chewies


I love the air fryer for making small batches of cookies quickly. I don't need to haul out and wash a large cookie sheet, heat up the big oven, or spend hours making a batch of fresh cookies. Plus, I have plenty of cookies for dinner and snacks but not so many that the cookies will go stale or cause me to over indulge. The cookie recipe I'm offering here is quick to mix up. I add the ingredients to a two-cup measure and stir them into a dough with a wooden spoon. The cookies take about 8 minutes to bake in the air fryer, but add on a few minutes of time to cool them down. Yes, it's incredibly tempting to scarf down the hot cookies, but you'll burn your mouth, and the cookies need a few minutes to firm up. How do the cookies taste? Great! They are chocolate-hazelnut flavored because of the addition of a Nutella-type spread. Oats provide chew and texture to the cookies as well as health benefits (okay, I know, cookies are not health food, but the oats do help!). Although I don't generally bother, you can add mini-chocolate chips or chopped hazelnuts to the batter for even more flavor. These cookies have slightly crackled tops. I like the cookies best cooked for the minimum amount of time, which yields a soft and chewy cookie. If you'd prefer a crispier cookie, just cook the dough a little longer. The cookies pair nicely with milk, tea, coffee, and/or ice cream.

Air Fryer Cookies: Chocolate-Oat Chewies -- Makes 10-11

1 cup of oats (old fashioned)

1/4 cup of Nutella-like hazelnut spread

1 large egg

1/4 cup of sugar

1/4 cup of flour

1/4 teaspoon of baking soda

1/8 teaspoon of salt

1/4 teaspoon of cinnamon

1 tablespoon of milk

Add all the ingredients to a 2-cup measure or a medium bowl and stir them together until they're thoroughly blended into a stiff dough. Cut small squares of parchment paper large enough to fit into your air fryer (approximately 6-7 inches for each square). Preheat the air fryer for a couple of minutes at 320 degrees. Drop two 1 1/2 tablespoon mounds of dough onto each square. Bake the cookies, 2 at a time, for 8-10 minutes or until just barely set. Remove the cookies from the air fryer and let them cool for a couple of minutes before removing the cookies from the parchment paper. Repeat the baking process with the remaining cookies. Yum, yum, yum, yum, yum.
