Air Fried Carrots with Thyme


These carrots are the antidote to the usual boring vegetables. They are sweet, soft in the center, and just a bit crunchy on the outside. Flavored with a little dried thyme and olive oil, the carrots will hold their own beside any meat you choose to serve with them. Or, the carrots can feature alongside a vegetarian entree if you'd prefer. In the air fryer, the carrots take about 20 minutes to cook--far less time than in a conventional oven. I use fresh "baby carrots," but you could certainly use regular bagged carrots and simply cut them into 2-3-inch pieces, if you'd rather. Try them and you may not want to go back to steamed or boiled carrots.

Air Fried Carrots with Thyme -- Serves 4

16 ounces of fresh "baby carrots" or regular carrots cut into 2-3-inch pieces

2 teaspoons of olive oil

1 teaspoon of dried thyme

1/4 teaspoon of lemon pepper

1/4 teaspoon of salt

In a large bowl or plastic bag, combine all the ingredients and mix them well. Preheat the air fryer to 400 degrees for several minutes. When the fryer is hot, add the carrots in one layer to the fryer basket and cook them for about 20 minutes or until they pierce easily with a knife or fork. Make sure that you pull the basket from the air fryer periodically--about every 5-10 minutes--and shake it to turn the carrots so that all sides of the carrots brown evenly. Let the carrots cool a few minutes before serving them.
