Okay, so did you buy that mega-package of chicken-apple sausages that were on sale at Costco and now need a recipe to turn them into dinner? This is the recipe you need. The easy skillet meal takes about 20 minutes, and, in addition to the sausages, includes savory onions, sweet apple pieces, and egg noodles that soak up the saucy broth. This is one of my "go-to" meals when I'm in a hurry and need to get a nice dinner on the table that I know everyone will like and eat. Any leftovers also make great weekday lunches. Enjoy!
Chicken-Apple Sausage Skillet Dinner -- Serves 4
2-3 teaspoons of canola oil
16-ounce package of pre-cooked, chicken-apple sausages (I use Aidell's)
1 medium onion, chopped (about 3/4 cup)
2-3 small, cored, chopped apples (1 1/2 - 2 cups) (no need to peel)
1/4 - 1/2 teaspoon of dried thyme (depending on how much you like it)
1/4 teaspoon of cinnamon
3 cups of water
8 - 9 ounces of egg noodle pasta
2 tablespoons of butter
Salt and pepper (optional)
Chopped or snipped parsley (optional but good)
Heat the oil in a non-stick skillet over medium heat and, once the pan is hot, add the sausages, onion, and apple. Saute the mixture for 6-8 minutes until the sausages brown a bit and the onions and apples have started to soften. Sprinkle on the thyme and cinnamon and then add the water. Bring the mixture to a boil and stir in the noodles. Turn the heat down to medium low, partially cover the pan, and let the mixture cook for 5-10 minutes or until the noodles have softened and most of the water has been absorbed (about 1/2 cup or so should remain). Turn off the heat and stir in the butter. Taste the noodles and sauce and add a little salt and pepper, if you'd like (remember that the sausages will be pretty salty). You can add a little water if the mixture seems dry. Sprinkle on the parsley, if you'd like and serve the sausage mixture from the pan for easy clean up.
