What to Make With a Bag of Cole Slaw? An Easy, Inexpensive Ground Turkey and Cabbage Bake in Your Air Fryer

This is an incredibly easy, inexpensive, and nutritious recipe. The turkey and cabbage bake also is really good! It's hearty but not heavy, thanks to the low-fat ground turkey in the mixture. The cole slaw mix and an onion provide great flavor to the meat as well as contributing lots of nutrients, and Greek yogurt and cottage cheese keep the bake creamy without the need to use a lot of cheese. The bake is great if you're on a diabetic diet or want to "eat healthy." I make the bake in an 8-inch pan in the air fryer in about 40 minutes. You don't need much alongside the bake. An additional vegetable or salad and perhaps some bread would be plenty. Enjoy!

Air Fryer Ground Turkey and Cabbage Bake -- Serves 4+


16-20 ounces of lean ground turkey (90-93 percent lean)

4 cups of cole slaw mix with carrots (from a bag)

1/3 cup of plain Greek yogurt (fat-free is fine)

1 large egg

1/2 cup of chopped onion

1 tablespoon of chopped fresh dill or 1 teaspoon of dried dill

1/4 teaspoon of garlic powder

1/2 teaspoon of sweet paprika

1 teaspoon of dried parsley flakes or 1 tablespoon of chopped fresh parsley, plus extra

to sprinkle

1/2 teaspoon of herbes de Provence or dried Italian seasoning

1/2 teaspoon of salt

1/4 teaspoon of pepper

1/2 cup of low-fat cottage cheese

2 tablespoons of grated Parmesan cheese

1 crumbled whole-wheat English muffin, preferably with raisins (or just add an extra two

teaspoons of raisins with a plain whole-wheat English muffin or piece of bread. You can omit the raisins, but they do add a nice bit of sweetness.)

1/2 cup of shredded cheddar or Colby-Jack cheese


In a large bowl combine the ground turkey, cole slaw mix, yogurt, egg, chopped onion, dill, garlic powder, paprika, parsley, salt, pepper, cottage cheese, and Parmesan cheese. Mix everything together well. Add the English muffin crumbs and mix them into the mixture until completely incorporated. Line an 8-inch square pan with aluminum foil and spritz the foil with non-stick cooking spray. Press the turkey mixture into the pan and smooth it out with the back of a spoon. Spritz the top with a bit of non-stick cooking spray. Air fry the bake at 320 degrees for about 35 minutes or until the bake reaches an internal temperature of 165 degrees. Sprinkle the top of the bake evenly with the shredded cheese. Spritz the cheese with non-stick cooking spray. Air fry the bake for another 3-4 minutes or until the cheese melts and bubbles at bit. Sprinkle on a little more parsley, if you'd like, and let the bake cool a few minutes before serving it. You can serve the bake from the pan, cut into squares, or lift the bake out of the pan (carefully!) using the aluminum foil as a sling.
