What To Do With Mushy Bananas? Make Air Fryer Peanut Butter and Banana Cookies

Do you have a couple of bananas that are past their prime? Then you're in luck. You can make a small batch of Peanut Butter and Banana Cookies in your air fryer. The cookies are soft, sweet, and loaded with banana taste. Peanut butter provides additional flavor as well as crunchy bits of peanut (if you use crunchy peanut butter). I usually add chocolate chips to the dough, but you can leave them out if you'd prefer. I recognize that not everyone want cookies with chocolate in them, and, in this case, the cookies will taste great whether you include the chocolate chips or not. How bad are the cookies for you? Not too bad, for cookies. The sugar and saturated fat is fairly low, and the cookies get a nutritional boost from the bananas, peanut butter, and oats. The cookies make great snacks if you're looking for something sweet but not too sweet. They also keep and reheat in the air fryer quite well. Enjoy!

Air Fryer Peanut Butter and Banana Cookies -- Makes 15+


2 mashed bananas (about 1 cup)

3 tablespoons of canola oil

3 tablespoons of peanut butter

2 tablespoons of sugar

2 tablespoons of brown sugar

1/4 teaspoon of salt

1 large egg

3/4 cup of old fashioned oats

3/4 cup of all-purpose flour

1/4 teaspoon of baking powder

1/4 teaspoon of baking soda

1/2 cup of chocolate chips (optional, but good)


In a medium bowl or measure, combine the bananas, oil, peanut butter, sugars, salt, and egg until they are thoroughly mixed. Stir in the oats, flour, baking powder, and baking soda until combined. Fold in the chocolate chips, if you're using them. Set the dough aside for at least half an hour. Cut pieces of parchment large enough to fit your air fryer basket. Stir the dough well. Drop 1 1/2 tablespoon portions of dough onto each sheet of parchment, spacing the dough mounds at least an inch apart. Put one dough-topped piece of parchment in your air fryer basket, put the basket in the air fryer, an air fry the dough at 300 degrees for about 10 minutes or until the cookies are a light golden brown. Remove the cookies from the air fryer to cool and repeat the cooking process with the remaining dough. Alternatively, bake as many cookies as you want and then cover and refrigerate the remaining dough to use later in the week.
