Use Your Discard to Make Easy Sourdough Apple Bread in Your Air Fryer or Oven
This bread is moist, a little sweet, and full of apples and dried cranberries or raisins. The bread is great for breakfast, dinner, or healthy snacking. I like to cook the bread in the air fryer to avoid heating up the regular oven and because the air fryer gives the bread a crunchier crust than the regular oven. I use two small 5- or 6-inch cake pans for the air fryer breads. If you want to bake the bread in the regular oven, you can use a loaf pan and bake the bread for 45-55 minutes at 350 degrees. Using either the air fryer or regular oven will give you great loaves of bread. I dust the breads with confectioners' sugar, but you can also glaze the breads, if you'd prefer, or just eat them "as is." Enjoy!
Easy Sourdough Apple Bread -- Makes 2 small loaves or 1 large loaf
1 cup of sourdough starter/discard
1/4 cup of canola oil
1 large egg
1/2 cup of dark brown sugar
1 cup of white whole-wheat flour (or regular whole-wheat flour)
1 medium peeled, chopped apple ( 1 - 1 1/2 cups)
3/4 teaspoon of salt
1/2 cup of all-purpose flour, plus about 1/4 cup to knead the bread
1/4 cup of raisins or dried cranberries
Confectioner's sugar (optional)
In a large bowl, combine the starter/discard, oil, egg, brown sugar, and white whole-wheat flour. Mix everything well, loosely cover the bowl, and let it sit for at least an hour (I usually leave the mixture for 4-5 hours, and it's fine). When you're ready, add the chopped apple, salt, 1/2 cup of all-purpose flour, and raisins or dried cranberries (or a mixture, depending on what you have/like). Stir, then knead the dough for 3-5 minutes, adding up to 1/4 cup of flour, as you knead, if necessary to prevent stickiness. Spritz two 5- or 6-inch round cake pans with non-stick spray (or use a loaf pan if you're baking the bread in the regular oven). Divide the dough into two pieces, shape each piece into a ball and place a dough ball in each of the cake pans (or shape the dough into a loaf if you're using the loaf pan and regular oven). Spritz the dough with non-stick cooking spray, loosely cover the dough, and let the dough rise until it's increased by about a third in volume. Uncover the dough, put one dough-filled pan in the air fryer basket, put the basket in the air fryer, and air fry the bread at 320 degrees for 25-35 minutes or until deep golden brown and cooked through. Remove the cooked bread from the air fryer basket and set it aside to cool, while you repeat the cooking process with the remaining dough. Let the bread cool in the pan for about 10 minutes, then remove it to cool completely. Dust the bread with a little confectioner's sugar, if you like.
