Use a Bag of Coleslaw to Make Easy Air Fryer Cabbage and Ground Turkey Balls (Diabetic Friendly)

This is an easy, good, and economical dish that's low in carbohydrates and loaded with nutritious ingredients. It also tastes really good. The recipe starts with a bag of coleslaw mix, which forms the base for ground turkey balls (or patties, if you prefer). The turkey balls stay moist thanks to some Greek yogurt in the meatloaf-like mixture. The cabbage and turkey balls get a simple cheese topping that increases the flavor and comfort-food level of the dish. With plenty of meat and vegetables in the dish, you won't need to add much for a simple supper. I usually serve the dish with a salad and fruit for a simple, low-carbohydrate dinner that's also delicious and filling. Enjoy!

Air Fryer Cabbage and Ground Turkey Balls -- Serves 4


Cabbage Layer

14 - 16-ounce bag of coleslaw mix

1/4 cup of chopped bell pepper, preferably yellow, orange, or red

1/4 cup of chopped onion

1/4 teaspoon of salt

1/4 teaspoon of pepper

1 tablespoon of Dijon mustard

2 tablespoons of grated Parmesan cheese

1/2 cup of plain Greek yogurt

3/4 cup of shredded cheddar cheese


In a large bowl combine the coleslaw mix, bell pepper, onion, salt, and pepper and microwave the mixture on high for several minutes or until the vegetables soften a little. Stir in the mustard, Parmesan cheese, yogurt, and cheddar cheese. Cut/tear off a piece of aluminum foil (preferably heavy-duty, or make two thicknesses) large enough to fit in your air fryer basket and a couple of inches up the sides. Put the foil in your air fryer basket and spritz the foil well with non-stick cooking spray. Spread the cabbage mixture evenly on the foil.


Turkey Ball Mixture

16 ounces of lean ground turkey (93 percent)

1 tablespoon of Dijon mustard

1/4 cup of plain Greek yogurt

1 large egg

1 tablespoon of grated Parmesan cheese

1/4 teaspoon of pepper

1/2 teaspoon of onion powder

1/2 teaspoon of garlic powder

1/2 teaspoon of poultry seasoning

1/2 teaspoon of salt

1 teaspoon of dried parsley flakes

2 tablespoons of quick or old fashioned oats

1/4 cup of shredded cheddar cheese


For the turkey mixture in a large bowl mix the turkey well with all the remaining ingredients except the cheddar cheese. With damp hands shape 4-5 balls or patties using the turkey mixture. Place the balls on top of the cabbage mixture. Spritz the tops of the balls with non-stick cooking spray. Air fry the cabbage and turkey balls at 320 degrees for 15-20 minutes or until the balls have browned and reached an internal temperature of 165 degrees. Sprinkle the tops of the turkey balls with the cheddar cheese and air fry the balls for a minute or two or until the cheese melts. Let the cabbage/turkey balls cool in the air fryer basket for a few minutes before using the foil as a sling to carefully lift everything out of the air fryer basket to serve it. Alternatively, just serve the turkey balls and cabbage directly from the air fryer basket.
